SPICE CAKE
RECIPE
Prep time 45 minutes
Bake time: 45 minutes
Total time 1 hr 30 minutes
Yield one round 9 Inch cake
8 to 12 serving servings
INGREDIENTS
Dry Ingredients
1 ½ cups of lightly measureed all purpose flour
(6.2 ounces)
½ tsp fine salt
1 Teaspoons baking powder
2 Tsp ground cinnamon
1 Teaspoons freshly grated nutmeg
1 ½ Tsp ground cloves
Wet Ingredients
4 Large eggs
¾ cup oil
1 Tsp Vanilla
½ cup warm cooking cream
1 ¼ cup gradulated sugar
Method:
Measuring and prepare allthe ingredients first toe organized
Heat the oven at 300 degrees ten minutes before baking
Grease and line a 9 x4 inch round cake pan, set aside
In a large bowl
Measure and sift the flour
Add the spices , salt and baking powder mix well to combine (set aside)
In a separate mixing bowl whisk the eggs
and sugar together
Until the sugar has dissolved and It reach a light fluffy consistency
Add the dry ingredients into 4 additions In the wet ingredients
alternating with the oil and the cream Into 2 additions adding the vanilla lastly
Mix lightly until all the ingredients are well incorporated
It should have a smooth consistency
Don't over mix the cake batter
Pour it in the prepared cake pan tap it lightly
Place it on the middle rack of the oven , let it bake for 45 minutes or when insert a toothpick, it comes out clean
Leave the cake in the oven for 5 minutes
Then take it out then allow it to cool in the pan for 15 minutes
Let it cool completely on a wire rack
Serve warm or cold with some whipped cream
Or some cream sauce and enjoy!
Keep it in an airtight container for 3 to 4 days .Taste best the next day
This spiced cake has a appetizing aroma and the taste is palate pleasing
One slice is all you need with a cup of tea .
Tips:
Dont open the oven until the cake has almost finish
Sift the flour to prevent lumps from forming
Mix the dry Ingredients until the spices are well disrbuted evenly
Don't over bake the cake
Make sure the spices are fresh for a more rich flavor
Measure the flour loosely by placing the four In the measuring cup lightly and level It off
With the back of a dinner knife

INGREDIENTS
For the cake:
- 1/2 cup unsalted butter, room temperature
- 1/2 cup white granulated sugar
- 2 large eggs
- 1 cup molasses
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 1/2 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp kosher salt
- 1 cup brewed coffee
For the frosting:
- 8 oz cream cheese, room temperature
- 2 tbsp unsalted butter, room temperature
- 1 1/4 cups powdered sugar, sifted
- 1/4 tsp kosher salt
- 1-2 tbsp cognac (optional) (or 1 tsp vanilla extract)
INSTRUCTIONS
For the cake:
- Preheat the oven to 350°F. Grease a 9x9 baking dish with butter or nonstick spray and set it aside.
- In a large bowl, cream the butter and sugar until it is light and fluffy, 3-5 minutes. Add the eggs one at a time, beating after each addition to evenly incorporate. Once the eggs are added, beat in the molasses and vanilla extract until the mixture is smooth.
- Add the flour, baking soda, cinnamon, ginger, cloves, and salt. At a low speed, beat slowly while adding the brewed coffee in a steady stream. Once all the coffee and dry ingredients are incorporated, fold the batter a few times by hand to ensure everything is evenly mixed.
- Pour the prepared batter into the baking dish and bake in the preheated 350°F oven until the cake is domed and a skewer inserted in the middle comes out mostly clean, 40-50 minutes. Once the cake is baked, remove it from the oven and set it aside to cool for 2 hours before frosting. Once the cake is cooled, frost and serve.
For the frosting:
- In a medium bowl, beat the cream cheese and butter until it is soft and smooth, 2-3 minutes. Add the cognac (or vanilla extract), powdered sugar, and salt. Beat it slowly until the powdered sugar is incorporated and smooth.

Ontbijtkoek is traditionally served at breakfast with a thick layer of butter on top, as a replacement for bread, however, due to its sweet taste it is also served as a snack. It is best eaten the day after it is baked. Ontbijtkoek is also found in Indonesia due to its historical colonization by The Netherlands.

Spiced Rum Cake
1 Spice Cake Mix
1 cup milk
1/3 cup oil
1/4 cup sour cream
1/4 cup rum
1 tsp pumpkin pie spice
4 eggs
Preheat oven to 350*
Blend all ingredients with a mixer on medium for 2 minutes.
Pour into a bundt pan sprayed with pan spray.
Bake at 350* for 35-40 minutes.
Let cool for 10 minutes and invert onto a cake plate and cool completely.
How to make the drizzle.
1 cup powdered sugar.
1 tsp melted butter.
1 tsp rum.
Stir together until smooth and drizzle over the cake.
Refrigerate and Enjoy!!
