Shopping List:
12-18 mushrooms depending on size
2 tbsps butter
1/4 cup panko bread crumbs
4-8 oz pancetta (or thick cut bacon)
4 oz cream cheese
1/2 onion diced
2 tbs butter
1/2 cup shredded parmesan cheese
olive oil or avocado oil
salt, pepper, garlic, onion powder, red pepper flakes
2-3 tbsps diced parsley
Directions:
Preheat oven to 400 degrees.
Remove stems from mushroom caps and use a spoon to hallow them out a bit. Dice mushroom stems, green onion, yellow onion and chop bacon. Fry bacon or pancetta and set aside. Remove 1/2 of the excess grease and add in the veggies. Once the veggies are cooked, add to the cream cheese and pancetta. Mix everything until well incorporated. Spoon mixture into mushroom caps and top with parmesan cheese. Bake 12-15 minutes. Baste with melted butter half way through if desired.

Make-ahead tip: To save you time on party day, you can make the crabmeat filling the day before and refrigerate until you’re ready to fill the mushrooms. But be warned, once you taste test this fabulous filling, you’ll be overwhelmed with the urge to eat the whole bowl with a big spoon. Another make-ahead option is to pipe the filling into the mushrooms, cover, and refrigerate up to 2 days. You may need to slightly increase the baking time to make sure that the filling is heated through.

• 24 large mushrooms
• 12 ounces lump crab meat
• 2 tablespoons lemon juice
• 1/2 cup panko bread crumbs
• 1/4 cup melted salted butter
• 1/4 cup grated parmesan cheese
• 2 teaspoon dijon mustard
• 2 teaspoons prepared horseradish
• 1 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 2 tablespoon chopped parsley (optional)

1️⃣ 00:00:17 - Preheat oven to 375 degrees F. Remove stems from mushrooms and place the caps into a lightly greased 9x13 pan.
2️⃣ 00:01:04 - Place lump crab meat into a large mixing bowl. Pour lemon juice over the top. Add in panko bread crumbs and stir together. Pour melted butter over mixture and add in parmesan cheese, dijon mustard, horseradish, garlic powder, and onion powder.
3️⃣ 00:01:45 - Scoop spoonfuls of crab mixture and place into the mushroom caps to fill all of them.
