How To make Creamy, Fudgy, Nutty Brownies
16 oz Unsweetened chocolate, chopp
1/2 c Magarine or butter
1 c All-purpose flour
1/2 c Nuts, chopped & toasted
1/4 ts Baking powder
1 1/2 c Sugar
3 Eggs
1 t Vanilla
TOPPING:
3 oz Bittersweet chocolate, chopp
6 oz Cream cheese
1 Egg
1/4 c Sugar
1 tb Milk
1/2 ts Vanilla
GLAZE:
2 oz Semisweet chocolate
1 t Shortening
Fresh raspberries
In a small saucepan melt unsweetened chocolate and the margarine or butter over low heat, stirring occasionally. Remove from heat; cool. Grease and lightly flour an 8x8x2-inch baking pan; set aside. In a medium mixing bowl stir together flour, walnuts or pecans, and baking powder; set aside. In a large mixing bowl stir together the cooled melted chocolate mixture and the sugar. Add the eggs and vanilla. Using a wooden spoon, lightly beat mixture just till combined. (Do not overbeat or brownies will rise during baking, then fall and crack.) Stir in the flour mixture. Pour the batter into the prepared pan; spread to edges. Bake in a 350 degree oven for 40 minutes. Meanwhile, for topping, in a small saucepan melt the semisweet or bittersweet chocolate over low heat, stirring occasionally; cool slightly. In a medium mixing bowl beat cream cheese with electric mixer on medium speed about 30 seconds or till softened. Add the melted semisweet or bittersweet chocolate, egg, sugar, milk, and vanilla. Beat until combined. Carefully spread topping evenly over hot brownies. Bake in the 350 degree oven about 10 minutes more or till topping is set. Cool in pan on a wire rack. Cover; chill at least 2 hours. To serve, cut brownies into triangles or bars. (To cut into triangles, first cut into rectangles, then cut in half diagonally.) If desired, in a small saucepan melt 2 squares chocolate and shortening; drizzle over brownies and onto plate. Garnish with raspberries, if desired. Cover and refrigerate to store. Makes 12 to 16 servings.

FOR FUDGY BROWNIES
100g chopped chocolates

1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon salt
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
FOR GANACHE
1 cup chopped chocolates
1/2 cup all purpose cream (or heavy cream
Chopped peanuts for toppings
DIRECTIONS
In a bowl, start melting the chopped dark chocolate with the unsalted butter using a microwave or double-boiler. Stir until completely melted. Let it cool for a few minutes.
Once cooled down a little, add granulated sugar and brown sugar. Mix until combined. Then add eggs one at a time. Stir in between until all eggs are added and well-combined. Then add vanilla extract and salt. Mix well.
Using a clean finger, check if the sugar is completely dissolved. Once ready, sift the flour, baking soda, and cocoa powder. Make sure to sift properly to prevent lumping parts. Then give it a good mix once more.
Prepare an 8×8 baking pan greased with butter or oil. Line with parchment or baking paper for easier unmolding.
Then, gently pour the brownie mixture to the baking pan. Tap against the table to remove air bubbles.
Bake in a preheated oven at 180°C for 20-25 mins. Do the toothpick test to see if it’s ready. After that, let it cool and set.
FOR CHOCOLATE GANACHE
Combine chopped chocolates and heavy cream in a heat-proof bowl. Microwave for a minute until melted. Stir until completely melted and shiny. (you can also do a double-boiler method)
Pour the hot chocolate ganache onto the brownie. Top it with any kind of roasted nuts to suit your liking. Chill for at least 4 hours.
Finally, you can cut your fudgy chocolate brownie into small bite-sized cubes and set it in a small cupcake liner. Enjoy!

You will Never want to go out & buy Box Fudgy Brownies again.
First Things First : So what is a Fudgy Brownie in simple words It is chocolate brownie that is of a square or rectangular shape & got a soft & creamy texture.
Brownies are generally made up of five main ingredients which are Chocolate (Of Course) , Butter, Flour, Sugar & Eggs but they may be either fudgy or cakey, depending on the ratio of ingredients used in them.
Fudgy is is more soft & creamy in texture while the Cakey is bit dried in the texture.
So like myself if you love to make a Fudgy Brownie you need to add more of Butter & more of chocolate while having less of flour then you would require in a Cakey Brownie.
Brownies may include nuts, In this recipe I have used Walnuts which are said to be be best nut combination with chocolate brownies.
You can also use frosting, cream cheese, chocolate chips, or other ingredients of your choice.
So lets make the fudgy brownie or better I must say the fudgiest brownies you will ever have & we will use walnuts as our main Nuts.

Ingredients:
180gms- Unsweetened cooking chocolate
100gms-Butter( a stick of butter)
2 cups-Brown sugar
3- Eggs
1 cup-Flour
1/3 cup-Cocoa powder
1 cup- Walnuts
Salt-1/4 tsp
Vanilla essence- 1tbsp

Method:
1-Roghly chop the chocolate & melt it a double boiler or microwave.
2-Roughly chop walnuts & then roast them in little butter for about 1min.Add a pinch of salt to the walnuts & remove from heat.
3-To the hot melted chocolate add 2 cups of sugar. One at a time add 1 cup of sugar & mix well in between.
4-Now add eggs one at a time mixing well in between.
5-Add vanilla essence & mix well
6-Add the flour & cocoa powder & combine well
7-Add the roasted walnuts & mix well
8-Preheat the oven @200°C
9- Line a square baking tray with parchment paper. Transfer the brownie batter into the baking dish
10-Bake it @180°C for about 35-40mins
11-when baked take out & let it cool down
12-Cut 3x3 square pieces
13- Serve
*NOTE* If you are not adding walnuts add 1/4 tsp salt to the brownie batter

METHOD
1. For the chocolate ganache, take cooking chocolate and butter and in a bowl and place it on the saucepan with boiling water.
2. After the chocolate and butter are melted, keep the ganache aside. Let it cool.
3. To another bowl, add maida, cocoa powder, baking powder and salt by sieving thoroughly.
4. To the cooled chocolate ganache, add sugar and vanilla essence. Mix well.
5. Add hung curd to the chocolate mixture and mix well. Whisk to get a smooth texture.
6. Add dry ingredients and mix again to get a smooth batter.
7. Once done, keep the brownie batter aside for 5 mins.
8. Preheat the oven for 15 mins at 180 degrees.
9. Meanwhile, line the tray with a butter paper and transfer the batter to the tray.
10. Spread the batter evenly and sprinkle chocolate chips, chopped walnuts.
11. Place the tray in the oven at 180 degrees centigrade for 30 mins and bake.
12. Once done, take the tray out and cut the brownies into small pieces.
13. Yummy eggless brownies are ready to be served.
