Greetings! We had a lazy Sunday planned. I have been so busy with gardening, canning, crafting, getting the kids back to school and a bunch of other things that I decided to have a lazy Sunday. Trust me, we needed it!
So on a day like this I like to let my dinner pretty much cook itself. That calls for a slow cooker meal. A little bit of work early in the day and you can sit down to supper later without much of thought. Just ladle out and enjoy. That is one of the reasons I really love my slow cooker!
I thought about what I had in the house because I did not want to go to the store. In fact. This weekend, I did not leave the house! I had frozen chicken breasts, spaghetti sauce from the food storage and lots of veggies in the freezer and produce bin. So Chicken Cacciatore it is!
I took one large 28 ounce jar of pasta sauce and added one 14 ounce can of diced tomatoes. Then I placed on bag about 2 pounds, of frozen chicken breasts in the sauce. I then began to see what I had in the produce bin. Some celery, some carrots, some onion, lots of garlic, some frozen green peppers from my garden and some white potatoes that I was lucky enough to get off of the produce mark down rack for a dollar!
I put everything but the potatoes in the crock and let that cook for about 6 hours. I placed the cut potatoes in a small bowl of water and covered them and put them in the fridge for later. While I was cutting everything up I just went ahead and did everything! Later I came back and added the potatoes about an hour before we wanted to eat. In all the dish cooked between 7 and 8 hours. Perfect dish for a lazy Sunday or a busy work night!
I also added about a tablespoon of Italian seasoning as well as a half teaspoon of red pepper flakes for a nice heat.
We ate this meal as is. It is complete with veggies, starch and protein. You get lots of body to the dish by using the jarred sauce mixed with the diced tomatoes. You could leave out the potatoes and cook mashed potatoes or rice, or pasta or polenta to serve this over top or along side. No matter what you choose, you will be so happy to sit down to this great meal with your family. It is hearty and healthful. This made enough for 6 hearty servings. We at one dinner and Rick and I ate it for lunch the next day. I took my leftovers to work and he enjoyed his at home on a lovely Fall day!

Slow Cooker Chicken Cacciatore
Here is a great Slow Cooker recipe that is sure to impress your family and friends, yet it is very easy to make. Throw everything in the slow cooker in the morning and you will have a Delicious meal for dinner.
Ingredients:
Chicken (I used 3 Breasts and 3 Thighs)
1 Onion, diced
3-4 Peppers (I used 2 Green and 2 Red) diced
1 Tablespoon Oregano
1 Tablespoon Basil
1/4 cup of Red Wine
4-5 Garlic Cloves, diced
1 large jar of Spaghetti Sauce
1 can of diced Tomatoes
1 can of Tomatoes Paste
8-16 ounces of Fresh Mushrooms
Salt and Pepper to taste
Start by placing the diced Onion in the bottom of the slow cooker. Lay the Chicken pieces on top of the Onions. Pour the jar of Spaghetti Sauce over the chicken, trying to cover all the pieces completely. Add the rest of the ingredients and cook on low for 4-5 hours.
Stir well and make sure the chicken is cooking. Feel free to remove chicken and shred or cut into smaller pieces if you desire. Set slow cooker on high for 25-30 minutes to prepare for adding the mushrooms.
Add the mushrooms and stir. Cook for 30 minutes, or until mushrooms are tender.
Serve over Angel Hair pasta and Garlic Bread for a great warm and hearty meal.

• 1kg (35 oz) of chicken thigh (Most cuts will be fine)
• 1 onion, sliced
• 2 tsp. garlic, crushed
• 1 Red Bell Pepper, sliced
• 2 Cups mushrooms, sliced
• ¼ cup red wine
• 1 tsp. sugar
• 2 Tbsp. tomato paste
• 2 cans crushed tomatoes
• ½ Tbsp. dried basil
• Salt & Pepper
• ½ cup pitted Kalamata olives (Optional)
Wine in the slow cooker doesn’t cook down as it normally does when cooking over a high heat. If you’re not a huge fan of wine, then I highly recommend to leave it out as a lot of the flavour and strength will remain even after 8 hours of cooking.
If you’re adding the olives, then it’s important to be aware that they will add a fair bit of salt to the dish. This makes it important to hold back on the salt until the end so you don’t accidently over season the dish.
As I mentioned in the ingredient list above the cut of chicken that you end up using doesn’t matter. Basically, any cut will work just fine but if you’re looking for the best results I would go breast or thigh.

Today I share the World's Best Chicken Cacciatore recipe! How do I know that it's the world's best recipe? Because this is my Mom's chicken cacciatore recipe and she was the best cook around. Mom made hers on the stove top but we are going to make our in our crock-pot. The full recipe is below

Mom's Chicken Cacciatore

3lbs skinless boneless chicken breast
2 green peppers sliced
2 red peppers sliced
3 zucchinni sliced
1 med white onion sliced
3 garlic cloves crushed
s/p
garlic powder
Mrs. Dash
(for sauce)
28oz can tomato puree (or for a thinner sauce crushed tomato)
6oz can tomato paste
small jar of roasted red peppers
Tsp salt
Tbsp dried parsley
tsp basil
1/2 tsp oregano
tsp garlic powder
1/2 tsp crushed red pepper
1/2 cup white wine
Tbsp Sugar
Generously prep chicken breast with s/p garlic powder and Mrs. Dash and place in crock-pot. Add sliced veggies and crushed garlic to crock-pot and set aside to prepare sauce. Mix remaining ingredients in a large bowl and pour over veggies and chicken and mix. Cook on Hi 4 hours or on low for 6 hours. Best served over 1lb of cooked pasta sprinkled with romano cheese.
Kitchen Hint: This recipe can be prepped the night before and kept in the frig overnight and cooked the next day or put all the ingredients in a freezer ziplock bag and freeze for a great crock-pot freezer meal.

I love this recipe for crockpot chicken cacciatore. It's flavorful, hearty and so quick to put together. I love crockpot meals, throw everything in, turn it on and go. Check it out:
Heres the recipe:
4-8 Bone-in Chicken Thighs, Skin Removed
2 tsp Salt
2 tsp Garlic Powder
2 tsp Dried Minced Onion
1 tsp Dried Rosemary
1 tsp Dried Basil
2 tsp Dried Oregano
1/2 tsp Red Pepper Flake
1 tsp Dried Thyme
28 oz can Plum Tomatoes
1. Combine all spices in a bowl. Remove skin from chicken thighs and place in crockpot. sprinkle layers of chicken with the spice blend.
2. Crush plum tomatoes with a masher and pour over chicken in the crockpot.
3. Cook on high for 3-4 hours, or low 6-8 hours.
4. Enjoy with rice or pasta whatever your favorite is, yum!
