16 oz Italian plum tomatoes,
Crushed 1/3 c Dry white wine
1 sm Onion, chopped
1 sm Green pepper, seeded and
Chopped 2 Cloves of garlic, minced
1 Bay leaf
1/2 ts Fennel seeds, crushed
1 ts Dried oregano, crushed
1/2 ts Ground coriander
1/4 ts Ground cinnamon
1/2 ts Crushed red pepper
2 lb Broiler chicken, cut into
Serving pieces with skin And fat removed OR two Whole chicken breasts, Halved, with skin and fat Removed Juice of 1/2 lemon 1 ts Salt-free vegetable
Seasoning 1. Place tomatoes in small saucepan. Add all remaining ingredients
except chicken, lemon juice, and vegetable seasoning. Cover and simmer for 5 minutes. 2. Season chicken with lemon juice and vegetable seasoning and broil on
both sides until lightly browned. 3. Arrange chicken pieces in baking dish sprayed with nonstick cooking
spray. Pour sauce over chicken. 4. Cover and bak in preheated 350F oven for 45 minutes, or until tender.

???? 6 chicken thighs bone in, skin on, trimmed of excess fat

???? Extra virgin olive oil
???? 1 small yellow onion chopped
???? 2 celery ribs chopped

???? 8 ounces mushrooms (white or baby bella) cleaned and sliced

???? 1 cup red wine

Ingredients
- 2 carrots, diced
- 1 stick celery, diced
- 1 onion, diced
- 3 cloves garlic, crushed
- 2 sprigs rosemary
- 1 whole chicken, cut into 8 pieces
- 3 tbsp olive oil
- 300ml red wine
- 700g jar tomato passata
- fresh parsley to garnish
- crusty bread to serve
Method
1. Season the chicken pieces with salt and then heat the olive oil in a large pan. Fry the chicken pieces until golden brown.
2. In the same pan, add the onions, garlic, carrots, rosemary, celery and onions and cover with a lid and cook for 5 minutes.
3. Add red wine and let it reduce for 5 minutes then add tomato passata and season with salt and pepper.
4. Cover and simmer for 30 minutes or until chicken is cooked through.
5. Serve hot with crusty bread and garnish with fresh parsley.

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
