Amazing Carrot Cake Recipe
My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!

Recipes Using Cake Mixes: #18 Lemon Crumb Bars
This one from Taste of Home magazine.
Crumb base and topping:
1 package lemon cake mix
1/2 cup cold butter
1 egg
2 cups crushed saltines
(about 60 crackers)
Filling:
3 egg yolks
1 can (14oz) sweetened condensed milk
1/2 cup lemon juice
In a large bowl, beat the cake mix, butter and egg until crumbly and set aside about 2 cups for topping.
Place the remaining crumbs in the bottom of a 9x13 greased baking dish and pat down gently packing mixture down evenly.
Bake the bottom crust at 350F for 18-20 minutes until edges are light brown.
Mix filling ingredients in a small bowl (egg yolks, sweetened condensed milk and lemon juice)
Pour filling over baked crust and top with remaining crumbs.
Bake again for 20-25 minutes until light brown.
Let cool and cut into squares.
Store in the refrigerator.
Note: Next time I would not bake the bottom crust before adding the filling, I found that it became much to brown during the second baking.
Also I recommend doubling the filling ingredients for an extra rich-tasting dessert.
This makes a LOT. You may want to freeze half for later.
Bake a Beach Cake with Jackie ????️ ???? Malibu Rescue | Netflix After School
Jackie R. Jacobson makes a cake that's basically a work of art!
Malibu Rescue Beach-Themed White Cake
For the Cake (this makes two layers but you can double it to make four layers):
1 cup softened butter
2 cups sugar
7 egg whites
1 tsp vanilla
2 2/3 cup flour
2 tsp baking powder
1 cup milk
Blue food coloring
Crushed graham crackers
For the Buttercream Frosting:
3 cups confectioners' sugar
1 cup butter
1 teaspoon vanilla extract
1 to 2 heavy tablespoons whipping cream
Instructions:
Preheat your oven to 350°F. Grease two 8-inch pans. In a bowl, cream the butter and sugar together with an electric mixer until fluffy. As you mix, slowly add egg whites in one at a time, making sure each egg white is fully incorporated before adding the next one. Add your vanilla.
In a separate bowl whisk together your flour and baking powder. This is your dry mixture. Take your dry mixture and slowly start incorporating it into the wet mixture you previously made. Start with putting only about 1/4 of your dry mixture into the wet batter, mixing it with an electric mixer. Next, add a little milk, alternating between adding the dry mixture and milk until all is incorporated.
Split your batter into your 8-inch pans and add food coloring to one half of your batter. Start with a few drops and adding more until you get your ideal color. Now you will have one blue layer and one white layer.
Bake for 25 minutes. To test if it's done, stick a toothpick through the center. If it comes out clean, your cake is done. Take your cakes out of the oven and let them cool completely.
To make your frosting, mix butter and sugar with an electric mixer or in a standing mixer, starting on low and slowly increasing the speed. Then slowly add the vanilla and heavy whipping cream. Add blue food coloring to your frosting. You can separate your frosting and add different amounts of food coloring to make an ombré effect!
Once your cakes have cooled, stack one layer on top of the other, shaving off the top of the cakes so that they are flat and can stack evenly. Use frosting in between the layers and around the cake to make the layers stick together. This is called a crumb coat. Now, fully frost the cake with a thick layer of frosting on the sides and top. It doesn't have to be perfect. In fact, it looks more like the ocean if it's wavy instead of flat!
Finish decorating however you would like. Some ideas for a beach theme would be graham cracker crumbs as sand or chocolate seashells and turtles made from melting chocolate into a candy mold. Enjoy your finished Malibu Rescue cake!
