Easy Crustless Spinach Quiche
This Crustless Spinach Quiche is easy to make and full of delicious flavor! You'll love the combination of spinach, sweet onion, mushrooms, and cheddar and feta cheeses.

✅Ingredients
• 1 tablespoon extra virgin olive oil
• 1 small sweet onion, diced
• 4 ounces mushrooms, sliced
• 2 cloves minced garlic
• 10 ounces chopped frozen spinach, thawed and drained
• 6 ounces crumbled feta cheese
• 8 ounces shredded cheddar cheese
• 5 large eggs
• ½ cup milk
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 inch deep dish pie plate.
2️⃣ Heat olive oil in a large skillet over medium high heat. Add in onion and mushroom and saute until softened, about 5 to 7 minutes. Add in garlic and cook 1 minute more. Stir in spinach, feta, and cheddar cheese. Spoon mixture into the prepared pie plate.
3️⃣ In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture over the spinach mixture in the prepared pie plate.
4️⃣ Bake in the preheated oven for 40 to 45 minutes, until eggs are set. Let cool 10 minutes before slicing and serving.

2/3 cup (160g) cream
1/3 cup (80ml) milk

How To Make Crustless Bacon & Spinach Quiche - Recipe
Here’s how to turn “I’d love to make it but it takes so long to prepare a crust” into “I can whip up this quiche easily and fast”. Tasty with bacon and spinach, and cheese, of course.
INGREDIENTS
7 oz (200g) frozen spinach, thawed & water squeezed out
7 oz (200g) bacon, sliced across into 1/2 (10mm) pieces
7 oz (200g) mozzarella cheese, grated
1 onion, chopped
3 cloves garlic, thinly sliced
3/4 cup heavy cream (35%+)
1/4 tsp salt
DIRECTIONS
1. On medium heat, cook bacon, stirring to break apart slices, for 1 minute.
2. Add onion and cook, stirring occasionally, for 8-10 minutes.
3. Add spinach, garlic, and salt. Cook for about 2 minutes.
4. In a large bowl, whisk eggs. Whisk in cream.
5. Take spinach/bacon mix off heat and add half of cheese. Stir to combine.
6. Transfer spinach/bacon mix to a buttered glass pie pan. Pour egg over top and sprinkle cheese on top.
7. Bake at 350°F (180°C) for 45-50 minutes - until eggs are set.
