Ingredients
1 tbsp. GOYA® Extra Virgin Olive Oil
2 tbsp. GOYA® Tomato Sauce
1 tsp. GOYA® Minced Garlic
1 tsp. GOYA® Sofrito
2 packets Sazón GOYA® without Annatto
1 packet Sazón GOYA® with Coriander and Annatto
1 can GOYA® Small Red Beans
1½ cups Golden CANILLA® Rice
½ tsp. sugar

INGREDIENTS
- 1-1.3 lbs Lean Ground beef (92-93% lean)
- 0.75-1 whole bell pepper (green or red)
- 1 medium white onion
- 6-8 cloves of garlic, depending on size
- 8 oz of tomato sauce
- 1/2 cup manzanilla olives (including the brine)
- 1/2 cup raisins
- 1.5 tsp ground oregano
- 1 tsp ground cumin
- salt
DIRECTIONS
1. In a medium pot over medium heat, add olive oil and allow it to heat up.
2. Dice the onion, peppers, and the garlic (or optionally, use a garlic press on the garlic).
3. Add the peppers and the onions to the pot - it should sizzle. Add some salt and sweat the onions (~5 minutes).
4. Add the garlic, mix, and let sit for 2-3 minutes or until fragrant.
5. Add the meat directly into the pot. Add salt, oregano, and cumin. Mix to loosely incorporate the spices and the meat.
6. After the meat has browned a bit (~5 mins), add the tomato sauce, raisins, and olives. Mix and allow to cook for at least another 10 minutes.
7. Once the meat is an even brown color, it's ready to plate! You can let the meat simmer on low for longer, which will improve the flavor!

Sweet ham sliced or shredded
Pork lion sliced or shredded
Swiss cheese
Mustard & Pickles
Heat the meat in skillet
add butter to inside of bread and toast in skillet
add mustard then layer the meat and cheese
Place back in skillet and flatten with another skillet
Serve HOT!

Our 25th anniversary was supposed to be an adventure to another city, taking in the views, food and museums. This year brings us to no overnight stays, so Papaw worked and I made him lunch. Drove 25 mins to get it delivered nice and hot.

Today I’m going to be sharing with you how to make the best flaky beef empanadas seriously super delicious! The dough is just perfect and the ground beef is so flavorful, hope you enjoy it just as much as we do!

Don’t want to fry them? No problem, brush each empanada with olive oil and bake for 20-22 minutes at 400 degrees
Refrigerate for at least one hour
Ingredients: 20-22 empanadas
Empanada dough
3 3/4 c AP flour
12 tbsp cold butter
1 tbsp sugar
Salt I’m using 1 1/2 tsp
Ground Beef Stuffing:
2 lbs lean ground beef
2 small bell peppers (chopped)
1 Anaheim pepper (chopped)
1 small onion (chopped)
4 minced garlic cloves
2 tsp Mexican oregano
2 tsp thyme
2 tsp parsley
2 tsp basil
2 tsp paprika
1-2 tsp crushed red pepper
1 tsp garlic powder
1 tsp black pepper
Salt I’m using 2 tsp
???? your favorite melting cheese, I’m using medium cheddar, Monterey Jack and Oaxaca cheese
