Ingredients:
3/4 cup soy or rice milk
1/2 tsp apple cider vinegar
1 cup unsweetened applesauce
3 tbsp canola oil
1/2 cup brown sugar, packed
1 1/2 cups all purpose or whole wheat pastry flour
3/4 cup oat bran
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground cardamom
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup raisins or dried fruit of your choice

These muffins were seriously easy to put together! I really liked that sugar content was fairly low once I substituted the maple syrup for applesauce (about 1 teaspoon of sugar per muffin). I would definitely like to try making these again with half cashews and half white beans. Anyway, definitely give this recipe a try!!!
Banana Nut Muffins | Plant-Based Recipe
Super moist and plant-based recipe for banana nut muffins. Hope you enjoy it!

Recipe: Banana Nut Muffins
1/2 cup almond milk
1 teaspoon apple cider vinegar
2 ¼ cups whole wheat flour
1 ½ teaspoon non-aluminum baking powder
½ teaspoon baking soda
1 ¼ cups mashed over ripe bananas (about 2 large bananas)
1/4 cup maple syrup
1/2 cup apple sauce (this is the fat replacement)
1 flax egg (1 tbls. ground flax seed & 3 tbls. water)
1 teaspoon cinnamon
1 teaspoon salt
1 ½ teaspoons vanilla extract
½ cup chopped walnuts (really could have used 1 cup)
Preheat oven to 325F
In a medium bowl, whisk together the non-dairy milk and apple cider vinegar. Set aside for 5-10 minutes so it curdles
Mix up flax seed. Set aside
In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, and cinnamon.
Mash enough bananas to make 1 ¼ cups (2 bananas) and add this to a separate large mixing bowl. Whisk in the curdled milk, flax egg, apple sauce, maple syrup, and vanilla extract.
In separate bowls, combine dry ingredients.
Pour the wet ingredients into the bowl containing the dry ingredients and mix until just incorporated. Stir in the walnuts.
To make muffins -- Line a muffin pan with cupcake liners. Pour the batter into the muffin pan making sure the muffin cups are about 3/4 full. Bake for approximately 20 minutes or until an inserted toothpick comes out clean.
To make bread -- Pour the batter into a lightly oiled 8 x 4 inch loaf pan and bake for about 1 hour or until an inserted toothpick comes out clean.

Recipe and instructions for Sweet Potato / Apple muffins ????????
This recipe is my own. I am not vegan but I often bake in that way for my family.
I use a *FLAX EGG and **coconut milk in this recipe but you can substitute *dairy egg and **dairy milk if you prefer.
You will need to open the can of sweet potatoes and drain the liquid. Once they are drained, rinse in a colander under cool running water. Allow to drain – I usually prop my colander on the now-empty sweet potato can.
Preheat oven to 375º F
Prepare muffin tins (This recipe makes about 18 smallish muffins) with either cupcake liners or spray with a baking spray.
In a medium to large bowl, add the following:
2 C ~ AP flour
1 tsp ~ baking powder
½ tsp ~ baking soda
½ tsp ~ salt
1 TBL ~ ground cinnamon
1 tsp ~ nutmeg (Optional)
~~ Whisk ingredients together ~~
Make a well in this bowl by pushing all ingredients to the side. Into the well, add the following:
1 ~ *Egg
½ C ~ **Milk
½ C ~ Canola oil
1 C ~ packed brown sugar
The rinsed and drained sweet potatoes
1 ~ peeled and grated apple or 3 TBL applesauce
If you like very sweet muffins, add a little bit of maple syrup. (If you add Honey, these may not be considered vegan.)
Stir these ingredients into the dry to combine. You want to mix so that all the dry is incorporated into the wet ingredients, but you do not want to over-mix.
You can stir in chopped nuts at this stage, if you wish.
Spoon into the prepared muffin tins. Bake for 27 minutes. Check with a toothpick inserted into the center of one muffin.

Chocolate Banana Dessert
INGREDIENTS
* 4 large overripe bananas
* 6 tbsp unsweetened cocoa powder
* 1/2 tsp Vanilla
* 4 Scoops Pampered Chef Pea Protein
Blend and put in parchment line container then
Bake 350° for 20-25 mins
CHOCOLATE FROSTING (OPTIONAL)
* 2 tbsp coconut oil melted
* 1/4 cup cacao powder
* 2 tbsp maple syrup
