How To make Curly Maple's Applesauce Muffins
1 1/2 cups sugar
1/2 cup butter or margarine -- softened
2 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 cup applesauce
In a mixing bowl, cream sugar and butter by hand. Add eggs, one at a time, beating well after each addition. Combine dry ingredients. Add to the creamed mixture alternately with applesauce. Mix just unitl combined. Fill greased or paper-lined muffin cups 2/3s full. Sprinkle some sugar on top. Bake at 350 f. for 20-25 minutes. Cool on a wire rack.

Low Fat Vegan Forks over Knives Kale Salad + Maple-Mustard Dressing
This was my first cookbook. I bought it right after I saw the documentary and have loved every recipe I have made from it. There are HUNDREDS of recipes in the book and all without OIL!! The only downside is there are very few pictures. This one is on page 79. I did not use the Tahini. My husband does not like it so I do not use it. I feel like it does not make any difference in the dressing if you do or don't use it. I love this salad the day after I make it.
Recipe for the salad part is:
6 C Kale (I used both green and red kale)
1 C shredded red cabbage
1 C Shredded Carrots
1 C finely chopped broccoli florets
1 15-ounce can of chickpeas, drained and rinsed.

GF Glazed Lemon Cake (Whole Food Plant Based Friendly)
1-Bowl Gluten-Free, Oil Free Lemon Cake (Plant-based)
Cook Time 35-40 minutes at 350F
WET INGREDIENTS
1 2/3 cups dairy-free milk (if you use gluten free flour you may need to add more as you need it)
1/3 cup lemon juice (add more for more lemon flavor)
2-3 tbsps of lemon zest
1 tsp of apple cider vinegar
1/3 cup unsweetened applesauce
1 tsp pure vanilla extract
DRY INGREDIENTS
1 3/4 cup almond flour
1 ½ gluten free flour (Or USE ALL ALMOND FLOUR 3 1/4 cup total if you do you probably won't have to add additional milk)
1 scant cup potato starch (not flour)
1/3 cup cornstarch
1 cup of coconut sugar (or date, sucanat ,maple or any unrefined sugar add 1/3 cup more if you want it sweeter, but 1 cup was enough for me)
(If you want the cake to be more white yellowish you could use evaporated cane juice or cane sugar and a pinch of turmeric)
1 tsp baking powder
1/2 tsp baking soda
PLANT-BASED LEMON FROSTING (WFPB option below scroll down)
1 cup vegan non-dairy cream cheese Cashew, Tofutti or Trader Joes(TJ) cream cheese I prefer TJ
1 teaspoon vanilla extract
2 cups organic powdered sugar , more if desired
1-2 TBSP of lemon zest
1 tsp lemon juice
1/2 tsp of turmeric
WFPB Lemon Frosting
1 and 1/3 cups unsalted, raw cashews
1/2 cup almond milk (sub a few tbsp of lemon juice)
2-4 tbsp maple syrup
2 Tbsp of lemon zest
Cashews need to be soaked for at least 5 hours,seriously this will make for a creamy frosting and not a gritty one.
Bake at 350 degrees F (176 C) for 35-40 minutes use good 6-inch round cake pans, mine were not so good I will be investing in some..lol or a 9x13-inch pan which actually works better if you want more of a icing/glaze frosting.
Let it cool 15 minutes in the cake pans. Frost and enjoy!
Store cake covered at room temperature for 2-3 days or in the refrigerator for 3-4 days. Freeze up to 1 month.

Banana Bread Ingredients:
2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp espresso powder
Pinch of Kosher salt
2 large eggs + 1 large egg yolk
3 well-ripened bananas
1/2 cup unsalted butter, room-temperature
1 1/4 cup granulated sugar
1/2 tsp vanilla extract
Method:
Preheat oven to 350 Fahrenheit.
In a large bowl sift all the dry ingredients; flour, baking powder and soda, espresso powder, and salt. Set aside
Cream together butter and sugar till light and fluffy.
Add eggs and vanilla extract to creamed mixture.
Cut bananas into medallions and mix into wet mixture till completely smooth.
Fold dry ingredients into wet mixture until just combined. Careful not to overmix here.
Bake off for 50-60 minutes, and cool slightly.
Maple Glaze Ingredients:
1/2 cup pure maple syrup
3 tbsp unsalted butter
1/2 cup powdered/confectioners/icing sugar
Method:
In a small pot over medium heat, melt butter and maple syrup together till homogenous.
Bring mixture to a boil for 30-60 seconds and pull off the heat.
Sift in powdered sugar and whisk vigorously till completely smooth.
Assembly:
Puncture bread with a knife several times along the top of the loaf.
Pour maple glaze over and let set to completely cool.

Banana Nut Muffins | Plant-Based Recipe
Super moist and plant-based recipe for banana nut muffins. Hope you enjoy it!

Recipe: Banana Nut Muffins
1/2 cup almond milk
1 teaspoon apple cider vinegar
2 ¼ cups whole wheat flour
1 ½ teaspoon non-aluminum baking powder
½ teaspoon baking soda
1 ¼ cups mashed over ripe bananas (about 2 large bananas)
1/4 cup maple syrup
1/2 cup apple sauce (this is the fat replacement)
1 flax egg (1 tbls. ground flax seed & 3 tbls. water)
1 teaspoon cinnamon
1 teaspoon salt
1 ½ teaspoons vanilla extract
½ cup chopped walnuts (really could have used 1 cup)
Preheat oven to 325F
In a medium bowl, whisk together the non-dairy milk and apple cider vinegar. Set aside for 5-10 minutes so it curdles
Mix up flax seed. Set aside
In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, and cinnamon.
Mash enough bananas to make 1 ¼ cups (2 bananas) and add this to a separate large mixing bowl. Whisk in the curdled milk, flax egg, apple sauce, maple syrup, and vanilla extract.
In separate bowls, combine dry ingredients.
Pour the wet ingredients into the bowl containing the dry ingredients and mix until just incorporated. Stir in the walnuts.
To make muffins -- Line a muffin pan with cupcake liners. Pour the batter into the muffin pan making sure the muffin cups are about 3/4 full. Bake for approximately 20 minutes or until an inserted toothpick comes out clean.
To make bread -- Pour the batter into a lightly oiled 8 x 4 inch loaf pan and bake for about 1 hour or until an inserted toothpick comes out clean.
