1 c Stone ground yellow cornmeal
1 c Unbleached white flour
1 tb Baking powder
1/4 ts Salt
1/4 ts Baking soda
1 1/2 tb Sugar
1 1/3 c Buttermilk; or
1 c Plain yogurt; mix with
1/4 c Water
1 lg Egg
2 tb Corn, canola, or peanut oil
Pam 2 tb Butter
DAIRY HOLLOW HOUSE SKILLET SIZZLED BUTTERMILK CORNbrEAD. Preheat oven to 375~. In a large bowl, combine cornmeal, flour, baking powder, salt, baking
soda, and sugar. (If baking powder or soda appear at all lumpy, sift them in). Stir well to combine. In a small bowl, whisk together buttermilk, egg, and oil. Spray a 10-1/4" skillet with Pam. Put the skillet on over medium heat, add butter, and heat until the butter melts and is sizzling seriously. Tilt the pan to coat the sides of the skillet. As the butter's melting, quickly pour the wet ingredients into the dry, and, using a wooden spoon, stir the wet and dry together with as few strokes as possible only as many as are needed to combine the two. Don't beat it; don't smooth it out. Scrape the batter into the hot, buttery skillet if you've gotten it hot enough it will sizzle as it goes in and pop it in the oven immediately. Bake until golden brown on top, about 25 minutes. Serve, hot, cut in wedges. Yield 1 skillet or 8 large wedges. Source: Chef du Jour, Crescent Dragonwagon. How to Cook Cornbread in a Cast Iron Skillet
A recipe everybody should know.
Set oven to 400 degrees.
Put 1/4 cup vegetable shortening in the skillet and put it in the oven while it preheats.
Beat 2 large eggs, mix into 1-1/3 cups whole milk or buttermilk.
Mix the eggs and milk in with 2 cups self-rising cornmeal.
When the shortening is melted, take the skillet out of the oven, pour the shortening into the batter, mix it well, then pour it all back into the skillet.
Put the skillet back in the oven for 20 minutes.
Remove, and pour 1/4 cup of melted butter over the top.
Return it to the oven for another 5 minutes.
Remove, then gobble that stuff up!!

On this episode, we take the fun (gluten) out of bread and substitute in a bunch of bacon fat so we balance all that health out. You and all your fiend friends can cook this up after a night of PBRs and bong rips and feel good about the new direction your life is headed in now that you are focused on healthy foods.
Ingredients needed: Cornmeal, baking soda and baking powder, salt (if you have to go out to the store and get salt, just hang it up and go watch Olympic fast walking videos instead), buttermilk, egg, bacon, reserved bacon fat, serranos, butter, honey, chives (optional), and a cold PBR to make you feel good about all your stellar life choices.
Non edible items needed: iron skllet, fork (or a whisk for fancy boys), knife, oven, mixing bowls, some plastic wrap, passion, cleanly shaved hands.
Get yourself an iron skillet, watch the video, cornbread your mouth, impress your Mom's friends at her next dinner party.
