3 pk (8-oz each) cream
Cheese
softened 3/4 c Sugar
3 Whole :
smilin' eggs
1 t Vanilla
1 c Dairy sour cream
IS IT CHEESECAKE; OR IS IT FUDGE? 1. Prepare Vanilla Cookie Crust: press mixture evenly onto bottom and 2 inches up side of a buttered 9-inch springform pan. 2. Melt chocolate over hot, not boiling, water; cool. 3. Preheat oven to very slow (275~). 4. Beat cream cheese, sugar, eggs and vanilla in a large bowl with electric mixer until smooth. Stir in cooled melted chocolate and sour cream until blended. Pour into prepared pan. 5. Bake in preheated very slow oven (275~) for 1 hour and 45 minutes. Turn off heat; let cake cool in oven with door ajar. Remove from oven to wire rack; cool to room temperature; refrigerate. Garnish with whipped cream and chocolate curls, if you wish.

Room temperature cream cheese: 350g
115g sugar
3 eggs at room temperature (1 egg without shell 54g)
200g heavy cream (whipped cream with sugar-free milk)
150g dark chocolate
cake flour 8g (can be substituted for all-purpose flour)
7g cocoa powder (sugar-free)
TIP
Eggs and whipped cream at room temperature for at least 1 hour
For hard cream cheese, leave it at room temperature for at least 1 hour.
When there are lumps in the cream cheese dough, use a sieve once.
Do not stir too much with the whisk. If too much air enters the top of the cake
it can explode

【For a 6 inch (15cm) cake mould II 6寸(15cm)模具】
(A) Crust 饼底
- Oreo cookies 奥利奥饼干 (10pcs)
- Butter 黄油 (30g)
(B) Choc Cheesecake Mixture 巧克力芝士
- Cream Cheese 奶油芝士 (250g)
- Sweetened condensed milk ( 1 tbsp)
- Icing sugar 糖分 (30g)
- Dark chocolate 黑巧克力 75% ( 125g)
- Whipping cream 奶油 (125ml)
(C) Ganache 巧克力淋面
- Dark chocolate 黑巧克力 (75g)
- Whippping cream 鲜奶油 (75ml)
- Butter (1 tsp)
Note:
1) Use high quality dark chocolate is the success key to delicious cake. Do reduce your sugar quantity accordingly if your the coco content of your dark chocolate is lower. I used Beryl's 75% dark chocolate coins (highly recommended)
2) This cake is best tasted after chill in fridge for more than 6 hours. The cake must be kept in fridge because it is non-bake without gelatin.

Ingredients:
For the crust:
200g (7oz) Oreo cookies
1/4 cup (60g) butter, melted
For the filling:
2 cups (450g) Full fat Cream cheese, room temperature
9oz (250g) Dark chocolate
1 cup (240ml) Heavy cream
2/3 cup (83g) Powdered sugar
1 teaspoon Vanilla extract
For the ganache:
140g (5oz) milk chocolate
1/2 cup (120ml) Heavy cream
Directions:
1. To make the crust: In a food processor or a Ziploc bag, crush Oreo cookies into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 8-inch (20cm) springform pan. Refrigerate while making the filling.
2. Chop the chocolate, melt in the microwave in 30 second pulses or over a double boiler.
3. In a large bowl beat cream cheese, powdered sugar and vanilla extract until smooth, add melted chocolate beat until combined and smooth.
4. In a separate bowl whip heavy cream to medium peaks. Gradually fold into the cheesecake mixture.
5. Pour the filling into the pan. Place in the freezer while making the topping.
6. Chop the chocolate, place in a large bowl. In a saucepan bring the heavy cream to a simmer. Pour over the chocolate. Let sit for 1-2 minutes. Stir until smooth. Pour over the cheesecake.
7. Refrigerate for at least 6 hours.
