Sugar Free Apple Crisp
Today we are cooking Sugar Free Apple Crisp. It is a great alternative to sugar filled deserts this Christmas.
Ingredients
5 apples (I typically use granny smiths but I used what I had on hand this time)
1/2 cup of chopped pecans
1 cup flour
2 tsps of vanilla extract
1/4 cup lemon juice
2 tablespoons of cinnamon
1/2 cup of butter - margarine- butter substitute (whatever you prefer)
1/2 cup Stevia
2 teaspoons apple pie spice
Preheat over 375 degrees. Wash, peel, and slice apples. Place apples in bottom of skillet. Then pour lemon juice over apples and sprinkle the cinnamon.
Melt the butter and mix in the flour. Mix over low-medium heat on stove until mixture is smooth. Then add vanilla extra. Mix. Add Stevia and Apple Pie Spice. Mix together for a minute or two. It will be clumpy. Mix in pecans. Once everything is mixed together dip it onto top of apples. It will be thick, just smooth it across top of apples. Try to create a thin layer over the apples. Put in over for 35-45 minutes. Cook until golden brown. Take out of oven and serve hot with sugar free whip cream or ice cream. Enjoy!

2 tsp tapioca flour or cornstarch
1 tsp ground cinnamon or nutmeg
½ cup apple cider
4 cups green apples, sliced
20 oz prepared pie crust dough, divided into 2 large discs
1 egg yolk
1 tbsp milk
all-purpose flour, for dusting

0:09 Preheat your oven to 325 degrees F.
0:11 Assemble the filling by combining tapioca flour, cinnamon, apple cider, and apples together. Mix until evenly incorporated and set aside.
0:37 Dust both your rolling pin and working area with flour.
0:44 Roll out 1 disc of dough until you achieve a roughly ½ inch thickness.
1:01 Transfer the dough onto your greased pie tin. Leave excess dough hanging on the sides of the pie tin.
1:13 Pour your filling onto your pie tin.
1:19 Repeat steps with remaining dough.
1:23 Cover the pie and seal edges. Then, make a few slits on top.
1:37 Prepare your egg wash by beating together egg yolk and milk.
1:48 Brush this around and on top of your pie.
1:59 Bake for roughly 40 minutes, then increase your oven temperature to 400°F. Broil the crush until golden, roughly 10 minutes.

Ingredients:
1.3 kg golden delicious apple, cored, sliced, peeled
stevia (the equivalent of 180 g sugar)
2 teaspoon cinnamon
1 tbsp lemon juice
30g butter
Directions:
1. Wash and peel the apples. Core the apples.
2. Slice the apples.
3. Put the apples in a bowl, add the stevia or sugar, cinnamon, and lemon juice.
4. Use a spoon to mix combine all the ingredients.
5. In a pan add the butter and when it is melted add the filling.
6. Caramelize for 5 min.
7. Use it in pies, cakes, as a topping for ice cream.

Ingredients:
For 6 servings
PIE DOUGH
3 cups flour
1/2 teaspoon salt
200g butter
8 tablespoons ice water, or as needed
FILLING
1.3 kg golden delicious apple, cored, sliced, peeled
stevia (the equivalent of 180 g sugar)
2 teaspoon cinnamon
1 tbsp lemon juice
30g butter
1 egg yolk
1 tbsp milk
P.S.: If you use sweetener make sure you put the right quantity of sweetener to avoid being very sweet.
Directions:
1. In a medium-sized bowl, mix the flour and salt with a fork. Add the cubed butter and break it up into flour with a fork. Form the crumbs with a fork or with your hand. Gradually add the ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
2. Work the dough together with your hands into a ball. Cut the pie into 2 parts, and cover with cling wrap. Refrigerate for 30 minutes.
3. Peel the apples, then core and slice.
4. In a bowl, add the sliced apples, stevia or sugar, cinnamon, and lemon juice. Mix until combined. Add the butter to the pan, add the apple filling and caramelize for 5 min.
5. Preheat the oven to 180°C.
6. On a floured surface roll the dough.
7. Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Cut the excess dough. Put in the fridge for 30 minutes
8. Pour in apple filling mixture and pat down.
9. Repeat the same rolling process. Use a knife to cut the dough into strips of about ½-inch width.
10. Arrange rows of strips across the top of your pie. Fold over every other strip halfway up and place another strip of pastry across. Unfold the strips then fold over the other strips. Repeat this process until the latex is complete.
11. Trim the extra dough from the edges. Make sure edges are sealed together.
12. Brush the pie with the beaten egg and milk.
13. Bake pie for 45 minutes or until the crust is golden brown.
14. Allow cooling completely before slicing.
