Making German Dilly Bread | You Can’t Buy This in Stores!!
Hey everyone, come along with me while I make a loaf of this amazing dilly bread! You know it’s a winner when it’s handed down through five generations!! See recipe below.
German Dilly Bread:
1 cup cottage cheese
1 Tb butter
2 Tb minced onion
1 heaping Tb dill seeds (must be seeds, dill weed won't work)
1 pkg yeast
1/2 cup warm water
2 Tb white sugar
1 egg
1/2 tsp salt
1/2 tsp baking soda
3 cups flour
Mix first four ingredients in a small sauce pan, heat on medium-low until butter melts - do not let it get too warm before adding to bread dough mixture.
In a mixing bowl, combine yeast, sugar and water, stir to dissolve yeast. Mix in one egg to yeast/water. Remove cottage cheese mixture from stove, stir in baking soda. Add cottage mixture to the bowl, stir to combine. Add 2.5 cups of flour and the salt, mix well. This is a sticky dough, so add the remaining 1/2 cup of flour a couple spoonfuls at a time, combine. You want to have a sticky dough that forms a ball on its own, and mostly pulls away from sides of bowl but still very tacky. Add flour until it reaches that stage. Once dough is at desired consistency, use a spatula to scrape it away from sides of bowl, then flour your hands, lift the dough in your hands, and fold it over itself until you form it into a ball. Place in an oiled round dish/pot, aprx 2-3quarts in size. Flip dough ball over so oily side is up. Cover with plastic wrap and let rise in a warm place for 1-2 hours, until double in bulk. Remove plastic from dish, preheat oven to 350*, bake for 50 min until brown on top. Let cool about 10-15 min before removing from dish onto a wire rack to cool.

Cheddar Dill Bread -- Lynn's Recipes
Lynn demonstrates a delicious Cheddar Dill Bread that would be perfect to accompany any meal. From Pinterest.
½ cup warm milk
½ cup warm water
2 teaspoons yeast
2 Tablespoons butter, softened
1 Tablespoon sugar
1 egg
½ teaspoon salt
2-1/2-3 cups all purpose flour
½ cup shredded cheddar cheese
¼ cup butter, melted
¼ teaspoon dried dill weed
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
Spray a loaf pan with cooking spray and set aside.
Place warm milk, water, sugar and yeast in mixing bowl. Add 2 Tablespoons softened butter, egg, salt and 2 cups flour. Stir with the mixer until dough pulls together. Knead dough (with a dough hook or by hand) and add flour, a few Tablespoons at a time, until you get a soft dough, about 5-7 minutes. Add cheese in the last minute of kneading. Put in a dough that has been sprayed with cooking spray and cover with plastic wrap that has been sprayed with cooking spray and let rest for about an hour or until almost doubled in size.
Preheat oven to 350°.
Mix melted butter with dill and spices. Punch dough down and roll bits of dough into balls, a little smaller than a golf ball. Dip balls into butter, and place in the prepared loaf pan. Let rest for 20-30 minutes.
Bake in preheated oven for 30 minutes. Pour remaining butter over the top of the loaf and bake for 15 additional minutes.
Cool for 10 minutes and then turn out of the pan. Turn right side up (butter side up) to serve. Serve warm.
