How To make Dilly Zucchini Ricotta Muffins
1 1/2 c Unbleached Flour
2 T Sugar
3 t Baking Powder
1/2 t Salt
3/4 t Dill Weed
1/4 c Milk
1/2 c Margarine/Butter, Melted
2 ea Large Eggs
2/3 c Ricotta Cheese
1/2 c Shredded Zucchini
Heat oven to 400 degrees F. Line with paper baking cups or grease, 12 muffin-pan cups. Lightly spoon flour into measuring cup, level off. In large bowl, combine flour, sugar, baking powder, salt and dill weed, mix well. In medium bowl combine milk, margarine and eggs. Stir in ricotta cheese and zucchini, beat well. Add to dry ingredients, stirring just until moistened (Batter will be stiff). Fill prepared muffin cups 2/3rds full. Bake at 400 degrees F. for 20 to 25 minutes or until golden brown. Immediately remove from pan and serve.

Ingredients:
3 cups all purpose flour
2 cups sugar
2 teaspoons Saigon cinnamon
1 1/2 teaspoons salt ????
1 teaspoon ground ginger
1 teaspoon baking soda
1 teaspoon baking powder
3 large eggs ????????????
*1 cup vegetable oil
2 teaspoons vanilla
**1 3/4 cups cantaloupe, ripe, peeled and grated - flesh only
Instructions:
1. Preheat oven to 350 degrees. Prepare two 5x8x3 pans with flour-based cooking spray.
2. In a large bowl, add flour, sugar, cinnamon, salt, ginger, baking soda and baking powder. Whisk to combine.
3. In a large bowl, add eggs, oil and vanilla. Whisk until frothy and fold in the cantaloupe. Add dry ingredients to wet ingredients and fold until just blended, don't over-mix or cakes will be tough. Divide batter between two prepared baking dishes.
4. Bake for about 1 hour or until a toothpick inserted in the center comes out dry. Let cool before serving.
*feel free to substitute applesauce
**others have suggested to increase the amount of cantaloupe and decrease the amount of sugar - feel free to play with your ingredients
Make It All Better Tea
Ingredients:
1 peach ginger tea bag
1 peppermint tea bag ????
1 cup lemonade ????
2 cups hot water ????????
Instructions:
1. In a 4-cup tea pot, add all ingredients. Let steep for about 5 minutes. Sweeten or don't - prepare to have everything feel all better!
