How To make Earl's Mozzarella Meat Loaf
1 lg Onion; coarsely chopped
1 T Olive oil
1 Sweet red pepper; chopped
1 cl Garlic; finely chopped
1 ts Leaf basil; crumbled
1/2 ts Lef thyme; crumbled
1 1/2 lb Lean ground beef
1/2 lb Ground pork
1 c Old-fashioned oats; uncooked
2 Egg whites
4 oz Part-skim mozarella cheese
-cut in 1/4-inch cubes 1/2 c Grated Parmesan cheese
2 T Parsley; chopped
3/4 ts Salt; optional
1/8 ts Pepper
1/4 c Catsup
Preheat oven to moderate (375 degrees). Line jelly-roll pan with aluminum foil. Saute onion in oil in large skillet over medium heat 3 minutes. Add red pepper, garlic, basil, and thyme, saute 5 minutes. Combine beef, pork, oats, egg, whites, mozzarella, Parmesan, parsley, optional salt, and pepper in large bowl. Add vegetable mixture. Shape into large oval on prepared pan. Bake in moderate oven (375 degrees) for 30 minutes. Brush loaf with catsup. Bake 25 minutes or until cooked through. Let stand 10 minute before slicing. Judi's Notes: I would bake this meat loaf in a loaf pan due to possible grease escaping from the jelly roll pan. I would also spoon off some of the fat from the loaf after 30 minutes. INGREDIENTS ...
2 pounds Ground Turkey
1 - 12 oz. EARL CAMPBELL Smoked Cheddar Sausage / mixed with Beef-Pork-Chicken
1 large Egg
4 to 5 small Potatoes / boiled - or 2 medium size
1 large Onion / cubed
4 to 5 Garlic Cloves
1 cup fresh steamed Spinach / or frozen - squeezed
1/2 cup Italian Parsley / chopped
1 cup Italian Seasoned Bread Crumbs
1 cup Shredded Mozzarella Cheese
3 Tbsp. Sour Cream / 2 Tbsp. to mix in with the potatoes - 1 Tbsp. to mix in with the onions in chopper..
4 Tbsp. Milk / divided / 2 Tbsp. to be used in the meat - 2 other Tbsp. will be used for dipping fingers in.
Olive oil / for drizzleing the pans
SEASONINGS ... The measurments given are to start off with. More or less will be up to our own taste.
1 1/2 tsp. Pink Salt
1 tsp. Black Pepper
2 tsp. Paultry Seasoning
1 tsp. Paprika
1 tsp. Turmeric
2 tsp. Cumin

Earl of Sandwich at Disney Springs is testing a vegan option!! The Vegan Cannonballs! Sandwich is currently being tested and Earl of Sandwich invited us out to try it. The sandwich features Gardein Meatballs, Follow Your Heart vegan cheese and sauce. I really hope this stays on the menu.

The dressing is the star here. Fresh dill is stirred into a creamy mayonnaise and yogurt dressing, making you savor every bite of this comforting summer salad.
⭐️ Ingredients
2 pounds (1 kg) potatoes boiled, peeled, and cut into bite-size chunks
2 ribs celery thinly sliced
1 cup (120 grams) radishes thinly sliced
1 red onion chopped
½ cup (60 grams) pickles
DRESSING
3 tablespoons fresh dill finely chopped
½ cup (125 grams) vegan mayo or regular mayo
½ cup (125 grams) Greek yogurt or non-dairy yogurt
3 tablespoons (45 grams) apple cider vinegar + 1 tablespoon to sprinkle on potatoes
1 tablespoon (15 grams) mustard
