How To make Eating Well's Hermits
1 1/3 c All-purpose flour
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
2 ts Ground cinnamon
1 ts Ground allspice
1/2 ts Freshly grated nutmeg
1/4 ts Ground cloves
1/2 c Dark molasses
3/4 c Packed light brown sugar
1/4 c Vegetable oil, preferably
-canola 1/4 c Apple butter
2 lg Eggs
1 1/2 c Raisins
Recipe by: Eating Well Preheat oven to 350 degrees. Lightly oil a 9 by 13-inch baking dish or coat it with nonstick cooking spray; set aside. In a small bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg and cloves. In a large bowl, beat together molasses, brown sugar, oil, apple butter and eggs with an electric mixer until smooth. Add the dry ingredients and beat on low speed just until combined. Stir in raisins. Transfer the batter to the prepared baking dish; smooth the top. ake for 20 to 25 minutes, or until the batter feels "set" when lightly pressed in the center. Let cool in the baking dish on a rack. Cut into 20 bars. Store at room temperature in an airtight container. Makes 20 bars - 155 calories per bar, 3g fat These moist, spicy favorites keep well (if they get the chance). -----

These cookies (or bars if you wish) are SO simple and easy to make. If you bake even semi-regularly, you might just have all the ingredients in your pantry and fridge already.

Hermits
1 cup shortening
2 cups packed brown sugar
2 eggs
1/2 cup cold coffee
3 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
2 1/2 cups raisins
1 1/4 cups broken nuts
Mix shortening, sugar and eggs. Stir in coffee. Measure flour by dipping method or by sifting. Stir all dry ingredients together then blend into shortening mixture.
Preheat oven to 400 (I did mine at 375). Drop rounded teaspoons of dough about 2 apart on parchment paper covered cookie sheet.
Bake 8 - 10 minutes or until almost no imprint remains when touched lightly in the center.
If using self rising flour, omit the baking soda and salt.
Hermit Bars with Raisins Recipe

In a bowl mix together:
2 cups flour
1/4 tsp salt
1/2 tsp cloves
2 tsp cinnamon
2 tsp ginger
2 tsp baking soda
dash of nutmeg
Set aside
In a larger bowl mix together:
1 stick of unsalted butter (1/2 cup)
1 cup brown sugar
When that is well combined add:
1 egg
Mix
Add 1/4 cup molasses
Mix
Then add flour and spice mixture 1/3 at a time.
Fold in 3/4 cup raisins. Also can add nuts if you like!
Bake in a preheated 375 degree oven for 18 - 20 minutes.
Do not over bake or they will get hard!
