Nanna’s old-fashioned hermit Christmas cookies
Hermit Cookies are an under-rated cookie. Called 'hermits' because they can be stored, these fruit and nut filled biscuits are packed with flavour and spice. This 19th century cookie is popular in the U.S and Canada, with the main difference between the two countries is the Canadian cookies tend to contain dates - just like our recipe here! Hermit cookies are so popular overseas they even have a National day of celebration on November 15th. We love them for Christmas as the spiced flavour is reminiscent of Christmas cakes and puddings, but once you whip up a batch, you'll be making them all year round! The mix is quick to prepare and the cookies are formed by simply dropping tablespoonfuls of the batter onto your baking tray (yes, no rolling needed!). These cookies are then finished off with an optional rum glaze. It's Christmas in every bite!

Hermits Cookie Recipe
This simple and easy recipe comes from the original recipe from the bakers and sailors of the Intrepid! From a recent trip to the museum, from their exhibit Navy Cakes, I got this recipe for their version of Hermits. This has been scaled down to accommodate a much smaller serving size.
I've also included a second part to this video, to include a more traditionally known version of Hermits. Enjoy!

Old Fashioned Hermit Cookies - Chewy & Delicious!
Learn how to make Old fashioned Hermit cookies. These chewy delights are filled with raisins, nuts, cinnamon, cloves and nutmeg. Perfect to eat as an afternoon treat, lunchbox snack or mid-morning coffee break treat.

Recipe:
Ingredients-
1 1/2 cup flour
1 tsp baking soda combined with 1 tbsp water
1/2 tsp salt
1/2 tsp nutmeg
1 tsp cloves
1 tsp cinnamon
1/4 cup shortening
1/4 cup unsalted butter
1 cup brown sugar, firmly packed
3 large eggs
1/4 cup brewed coffee, cold
1 cup walnuts, chopped
1 1/2 cup raisins
Set oven to 375 degrees.
To a mixing bowl, add brown sugar, eggs, butter, shortening, coffee, baking soda and water mixture and spices. Add flour gradually. Mix in raisins and nuts. Drop by spoonful onto prepared baking sheet. 2 inches apart. Bake in oven for 8 - 10 minutes. Enjoy.

When TAK was an at-home bakery, I made thousands of these cookies. They were a holiday staple for my customers and they’re still a holiday staple in our home. Now, they can be one in yours!
Their salty-sweet nature makes them absolutely addictive. And that soft, chewy interior in combination with that crunchy sugar on top just cannot be beaten!
So we’re going to start with the cookie dough, I’ve got lots of great tips for y’all along the way so be sure to watch the video to the end!
INGREDIENTS:
* 2 1/2 cups all-purpose flour
* 2 teaspoons ground ginger
* 1 teaspoon ground cinnamon
* 1 teaspoon baking soda
* 1 teaspoon fine sea salt
* 1/2 teaspoon ground cloves
* 1 cup light brown sugar packed
* 3/4 cup + 2 tablespoons canola oil
* 1/3 cup dark molasses
* 1 large egg
* 1/2 cup coarse sugar crystals if desired
HOW TO MAKE GINGER MOLASSES COOKIES
1. Whisk together flour, baking soda, and spices.
2. Mix brown sugar, molasses, oil, and egg.
3. Add dry ingredients to wet ingredients.
4. Scoop, roll in sugar, and bake!
