CHIA Seeds - WHOLE vs GROUND -
As the popularity of chia seeds grows, chia seeds are increasingly found in more and more products in the supermarket. These are the 3 things that Chia Seeds are not that I often find myself having to explain and emphasize to my patients and coachees, many of whom are taking chia seeds to better control their diabetes, hypertension, high cholesterol and other lifestyle/diet-related chronic conditions.
As we find more and more packaged foods in the supermarkets that have Chia Seeds included in them, many people are making the mistake of being distracted by the 'Halo Effect' of 'Chia Seeds Inside' labels on food products and not looking holistically and critically enough at the inherent healthfulness, or lack of, of any food products that they buy. Regardless of how nutritious Chia Seeds are and how often one takes chia seeds, the need to learn and practise consistently eating habits to prevent and combat chronic lifestyle diseases remain something that is imperative.
Chia Seeds do have a place in our diet, but only as part of a healthy eating habit, not in place of one.
Ever since I posted this video more than 6 months ago (Oct 2020), it has received many comments from viewers, some positive and also many negative and even angry comments. I want to thank everyone who made the effort to leave comments, regardless of whether they were positive or negative. I shall take encouragement from the positive encouraging comments but at the same time, I will also not ignore or disregard the negative comments/feedback but to take such negative feedback seriously and learn from them, then use them as motivation for me to try harder to improve and make better videos moving forward. THANK YOU ALL!
My goal for this video was simply to highlight the importance of improving all aspects of our lifestyle and diet for health and to combat chronic diseases, to remind people NOT to be distracted by the 'Healthy Halo' of 'Superfoods' such as Chia Seeds when making food choices, especially when shopping for packaged foods in supermarkets, to encourage everyone to look at the full ingredients listing of all packaged foods before buying, including food products that have 'CHIA SEEDS INSIDE' labels

Chia seeds are a great healthy ingredient, full of nutrients, fiber and antioxidants, that I would encourage everyone to keep handy in their pantry. I use chia seeds often in my cooking, eg. sprinkling chia seeds into my beverages, soups and stews. But this video, as the title '3 THINGS THAT CHIA SEEDS ARE NOT' suggest, was never intended for talking about l the different health benefits of chia seeds or the different ways to take chia seeds.

EASY Mini Cheesecakes! Mini cheesecake recipe - No bake VS Baked

● Baked Easy Mini Cheesecakes:
- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g unsweetened Yogurt ( 7 ounces )
- 150 g Sugar (3/4 cup)
- 2 Eggs
- Grating of Lemon Zest
- 1 tsp Vanilla
- 20 g Flour ( 2 tbsp )
Bake for 15 minutes!
● 5 minute No Bake Mini Cheesecakes:
- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g Heavy Cream ( 7 ounces )
- 100 g Sugar ( 1/2 cup)
- 1 tsp Vanilla
Freeze for 15 minutes, then enjoy :)
● For the cheeesecake crust:
- 80 g Digestive biscuits/graham cracker cookies ( 3 ounces)
- 30 g Melted Butter ( 2 1/2 tbsp)

Crème Anglaise - Delicious Vanilla Bean Custard Sauce with Fresh Berries
The star of this dessert is the crème anglaise – a sweet, custard-like sauce that gets spooned over the mixed berries.
It sounds fancy and intimidating, but if you follow the steps carefully, you’ll have a beautiful, decadent sauce as good as any French pastry chef could make. The two keys to this sauce are your patience and a strong forearm for whisking.

Ingredients for this Recipe:
• 2 vanilla beans
• 4 cups heavy whipping cream
• 12 egg yolks
• 1 cup sugar divided
• 1 lb fresh strawberries quartered
• 1 pint blueberries
• 6 oz raspberries
• 6 oz blackberries
• whipped cream (recipe)
• fresh mint
Serves 6
Prep Time: 10 minutes
Cook Time: 15 minutes
Cooling Time: 90 minutes
Instructions
1. Split the vanilla beans lengthwise down the middle. In a heavy saucepan, add 4 cups of heavy cream and the vanilla beans. Heat the cream over low heat until bubbles begin to form on the edges. Remove from the heat. Remove the vanilla beans from the cream. Using the back of a paring knife, scrape the inside of the vanilla beans to remove the insides. Add the insides of the vanilla beans back to the heavy cream.
2. Separate the egg whites from the egg yolks and place the yolks in a large bowl. Reserve egg whites for another use.
3. Whisk the sugar with the egg yolks until combined
4. While whisking constantly, pour ¼ cup of the heavy cream into the egg yolks to bring the yolks up in temperature. Add the remaining heavy cream and whisk quickly to combine.
5. Place the heavy cream and egg mixture on a burner over low heat. Low heat is essential here! Whisk constantly until the sauce is thickened and coats the back of a spoon, about 8–12 minutes, see notes. Remove from the heat and transfer through a fine mesh sieve or chinois, if desired. Refrigerate for 90 minutes or until cool.
6. Serve by pouring some of the crème anglaise over top of fresh berries and serving with optional heavy whipping cream and mint.
CHEF NOTES:
• Vanilla beans add such a nice flavor that you can’t get from extract, but if you can’t find them, of course, feel free to use 1 tablespoon of high-quality vanilla extract made from real vanilla beans or 1 teaspoon of vanilla bean paste instead.
• Watch carefully while whisking the mixture over low heat to thicken, because the eggs can go from liquid to overcooked in just moments!
• If you like using thermometers the finished temperature of the crème anglaise should be in between 182° and 185°.
