Fancy Tea Biscuits( European Style with Flour, Butter, Sugar & Chocolate)
Tea Biscuits
INGREDIENTS:
350 gr. (0.8 lbs. or approx. 2 cups +1 tbsp.see note 2) all purpose flour
50 gr. (1.8 oz. or approx. 5 tbsp.) powdered sugar
90 gr. (3.2 oz.) unsalted butter
135 gr. (4.6 oz. (US, liquid) or 1/2cup + 1 tbsp.) water
5 ml (1 tsp.) pure vanilla extract
1 ml (1/4 tsp.) salt
5 ml (1 tsp.) baking soda
TOPPING: approx. 50 chocolate pieces
Notes:
1. The recipe yields approx. 48 biscuits (if using a 55 mm or 2-1/4” cutter).
2. I have measured the weight of 2 cups and 1 tbsp. of flour on my scale. I’m using a cup that has a volume of 235 ml. and a measuring tablespoon (tbsp.) with a volume of 15 ml.

This matcha cookie recipe is great if you’re a green tea fan! There are actually so many different ways to make cookies, I’m sure I’ll make different recipes in the future too. But today’s recipe is crunchy on the outside and chewy on the inside!

Matcha cookie ingredients:
All purpose flour 195g
Matcha 4 tbsp
Butter (or margarine) 100g
Brown sugar 120g
Granulated sugar 40g
Baking powder 1 tsp
Vanilla few drops
Egg 1
Pinch of salt
White chocolate and milk chocolate 175-200g
Here are a few things to get you started:
Matcha - culinary grade, organic, 113g (Amazon US, $14.99)
Baking chocolate (but you can use candy bar stuff too!) (Amazon US, $1.97)
Baking white chocolate (Amazon US, $6.38)
Heat-resistant balloon whisk (Amazon US, $9.49)
Set of 3 heat-resistant rubber spatulas (Amazon US, $9.99)
How to make chocolate chip matcha cookies:
1. Melt butter until liquid. This can be done in a microwave on low for 1-2 minutes, or on high for about 30 seconds. Alternatively, melt in a pot
2. Add both sugars and egg to butter and whisk until combined
3. Sift in flour and other dry ingredients
4. Using a rubber spatula or wooden spoon, mix until a dough forms. Do not over-mix unless you want cakey cookies!
5. Once you have a green cookie dough, refrigerate for 30 minutes or up to 3 days
6. Preheat oven to 190℃ (374℉)
7. Place cookies on parchment-lined baking tray in even spheres (video shows 60g, with a small press with the palm of your hand)
8. Bake cookies for 10 - 15 minutes. This will depend on your oven and the size of your cookies. Keep an eye on them, and when they start to get a little brown at the edges, they’re done!
9. Let cool on the baking tray for about two minutes before cooling on a wire rack. Try to resist eating them straight away and burning your tongue!

ingredients
- 1 cup pecans, walnuts, or almonds
- 2 cups flour
- 2 sticks or 1 cup of unsalted butter at room temperature
- 1/2 cup powdered sugar (can overestimate up to 3/4 cup)
- 2 teaspoons vanilla extract (a splash will suffice)
- 1/2 teaspoon salt (a pinch will suffice)
- powdered sugar to roll in
steps:
1. mix the butter and sugar, then add vanilla
2. add flour and salt, mix
3. toast the nuts to bring out the smell
4. crush the nuts then add and mix
5. spread out the cookie dough on cling wrap and chill for 30 minutes in the refrigerator or 15 minutes in the freezer
6. preheat the oven to 325°F
7. roll the cookies into small, 1 inch diameter balls, bake for 17-19 minutes (check periodically) until lightly golden
8. take out the cookies. when slightly warm, roll in powdered sugar and let cool

Keto Magic Cookies (about 1.5 net carbs per cookie)
Ingredients for 12-15 cookies:
4 yolks from large eggs
1 tablespoon (14g) salted butter, softened
3 1/2 tablespoons (50g) coconut oil, soft but not melted
1/3 cup (50g) keto confectioners' sugar (such as Swerve)
1 cup (100g) unsweetened coconut flakes
2/3 cups (90g) crushed or slivered nuts (I used slivered almonds)
2/3 cups (100g) keto chocolate chips
1. Whisk the egg yolks in a medium bowl. Then whisk in the butter and coconut oil. Add the confectioners' sugar, coconut, nuts, and chocolate chips. Stir with a spatula to combine all ingredients. Put the mixture in the refrigerator to chill for 30 minutes.
2. Preheat the oven to 350F (180C).
3. By the heaping tablespoonful, scoop or spoon the cookies onto a parchment-lined baking sheet, spacing the cookies about 2 inches apart.
4. As an anti-spreading measure, put the cookies in the freezer for 10-15 minutes.
5. Bake until the cookies brown lightly and are set -- 14-15 minutes. Cool completely on the baking sheet before devouring.
