How to Roast Garlic | Emeril Lagasse
Emeril's easy technique for roasting garlic will help kick up the flavor in your kitchen. Not only does it make for a delicious appetizer spread, but it's a great addition to pizza, sauces, potatoes, and meats!
ROASTED GARLIC
MAKES 3 TO 4 HEADS
3 to 4 heads garlic, upper quarter removed
4 teaspoons olive oil
Coarse salt
Freshly ground black pepper
Fresh herbs, optional
Preheat the oven to 350 degrees.
Place the garlic on a foil-lined baking sheet and drizzle 1 teaspoon of oil into the top of each head. Sprinkle lightly with salt, pepper, and fresh herbs, if desired. Wrap in foil and bake until cloves are soft and golden brown, about 1 hour. Remove from the oven and let sit until cool enough to handle. Squeeze each head over a small bowl to expel the roasted cloves. Set aside until needed.

Buttermilk Pancakes | Emeril Lagasse
Ring the breakfast bell! Emeril’s simple to make Buttermilk Pancakes, served with a fresh Orange Syrup with Berries, is the perfect dish for your next breakfast gathering. Your family and friends will all agree that these pancakes are irresistibly delicious.
EMERIL'S BUTTERMILK PANCAKES WITH ORANGE SYRUP WITH BERRIES
MAKES ABOUT 12 PANCAKES
PANCAKES
2 cups all-purpose flour, sifted
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon coarse salt
2 tablespoons granulated sugar
1 large egg, unbeaten
2 to 2 1/2 cups buttermilk
3 tablespoons melted butter or vegetable oil, plus more for griddle
ORANGE SYRUP WITH BERRIES
1 tablespoon freshly grated orange zest
3 cups freshly squeezed orange juice
1/2 cup granulated sugar
2 tablespoons unsalted butter
1/2 teaspoon almond extract
1 cup fresh raspberries and blueberries, well rinsed and dried
Pancakes: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, whisk together egg and 2 cups buttermilk until thoroughly incorporated. Gradually add flour mixture and beat until smooth. Add butter or oil. If the batter is too thick, add more buttermilk, a tablespoon at a time, until desired consistency is reached.
Preheat a griddle over medium heat. When heated, lightly coat with melted butter or vegetable oil. Working in batches, ladle pancake batter onto griddle leaving space between each pancake. Cook, turning once, until golden brown on both sides.
Orange syrup with berries: In a medium saucepan, combine zest, orange juice, and sugar over. Bring to a boil, over medium-high heat, stirring to dissolve the sugar. Reduce heat to a simmer and cook until reduced by half and forms a thick syrup, about 15 minutes. Add butter and almond extract and whisk to combine. Add berries and remove from the heat. Let cool slightly before serving with pancakes.
