1 lb Lean ground beef round
1 T Instant minced onion
1 Clove garlic, peeled and
-crushed 1 t Pepper
2 1/2 t Chili powder
2/3 c Water
8 oz Can tomato sauce
2 c Sharp Cheddar cheese,
-shredded 1/4 t Salt
6 Tortillas or taco shells
1. Crumble beef into a shallow, 2 1/2-quart, heat-resistant, non- metallic
casserole. Sprinkle meat with minced onion and crushed garlic. 2. Heat, uncovered, in Microwave Oven 5 minutes. Stir oc- casionally to
break up meat. 3. Drain excess fat. Add pepper, chili powder, water and tomato sauce. Stir
to combine. Heat, uncovered, 4 minutes in Microwave Oven. 4. Alternately layer tortillas, meat sauce and cheese in a round-1
1/2-quart,
heat-resistant, non-metallic casserole. Last layer should be cheese. 5. Heat, covered, in Microwave Oven 7 to 9 minutes or until cheese is
melted.

????SUPER EASY Crockpot Enchilada Casserole (Save this recipe for later):
1. Add one diced onion, can of rinsed and drained black beans, 3 boneless skinned chicken breasts, a packet of fajita seasoning, & about 3/4 can of enchilada sauce (15 oz can) to a crockpot. Cook on high for 4 hours.
2. Shred chicken in crockpot
3. Add a bag of frozen corn, mix, cook for another 15 mins.
4. Add cut flour tortillas (I used about 8) and mix into chicken mixture.
5. Add shredded cheese (I used Mexican blend) on top and then put the lid on for another 5-10 minutes until the cheese is melted.
6. Add your enchilada casserole to a bowl and top with your favorite toppings. We used sour cream & valentinas hot sauce, but it would be great with shredded lettuce, avocado, jalapeños too!!

Chicken Enchilada Casserole l The Recipe Rebel
PRINTABLE RECIPE & NUTRITION INFO:
Enchilada Sauce*
▢ 28 oz canned crushed tomatoes (798 ml) no salt added
▢ 1 cup water
▢ 1 tablespoon garlic powder
▢ 1 teaspoon cumin
▢ 1 teaspoon onion powder
▢ 1 teaspoon dried oregano
▢ 1 teaspoon salt
▢ ½ teaspoon chipotle powder (you can sub smoked paprika)
▢ brown sugar
Chicken Enchilada Casserole
▢ 1 tablespoon oil
▢ 1 medium onion (diced)
▢ 1 green bell pepper (diced)
▢ 3 boneless skinless chicken breasts (about 1.5-2 lb)
▢ 10 medium flour or corn tortillas
▢ 4 cups shredded Monterey Jack cheese
▢ pico de gallo, salsa, sour cream, cilantro, lime wedges, etc for garnish as desired
Instructions
Preheat oven to 375 degrees F and lightly grease a 9x13 baking dish.
In a medium bowl, stir together all ingredients for enchilada sauce: tomatoes, water, garlic, cumin, onion powder, oregano, salt and chipotle powder. Taste and adjust to your preferences add 1 teaspoon brown sugar to balance the acidity of the tomatoes if needed.
Heat oil in a medium skillet over medium-high heat.
Add onion and peppers and cook, stirring often, until softened. Add chicken breasts and 1 cup enchilada sauce.
Cover, reduce heat to medium-low and simmer until chicken is cooked through, about 10-15 minutes (it should reach an internal temperature of 165 degrees F).
Remove chicken from pan and shred with two forks. Stir chicken back into the skillet with the vegetables.
Assemble the casserole: Spread ½ cup sauce in the bottom of the baking dish.
Cut tortillas in half and lay in baking dish so that they cover the bottom (I used 3 on the first layer, and 4 on the next two layers. Do what works for you!).
Top with ⅓ of the sauce, ⅓ of the chicken, and 1⅓ cup of cheese. Repeat 3 times, using enough tortillas to create a complete layer and topping with ⅓ of the sauce, ⅓ of the chicken and 1⅓ cup of cheese until finished.
Bake for 20-25 minutes or until heated through. Broil if desired to brown the cheese further.
Serve with optional garnishes as desired.

Easy Enchilada Casserole - Red Enchilada Sauce Recipe
This recipe is a great way to make enchiladas with out the tedious task of rolling the tortillas. Some call this dish Mexican Lasagna. It's good no matter what you decide to call it.
*If you use a 9x13 baking pan the recipe makes two layers
INGREDIENTS
1lb of ground beef or turkey
2 bell peppers of your choice
1 onion
2 to 3 cloves fresh garlic
salt/ pepper to taste
10 to 12 corn tortillas
2 1/2 to 3 cups cheese
ENCHILADA RED SAUCE
3 tbls oil
2 1/2 tbls flour
2 to 3 tbls chili powder
1 chicken bullion cube
2 1/2 cups water
