Super easy to make 5 main ingredients, Low carb dessert, sugar free, 1 minute microwaveable keto desert single serving size! Healthy single serve dessert recipes that I can't get enough of!
Recipe:
1 Medium Egg (use whatever you have)
1 Tablespoon of Cocoa Powder (unsweetened)
2 Tablespoons of PB2
1.5 Tablespoons of Swerve Confectioners Sugar
1/2 teaspoon of Baking powder
1/2 teaspoon of Vanilla extract (not completely necessary)
Dash of Salt (it's a great addition)
Mix together and microwave for 1 minute in a microwave safe dish
Macros: roughly 110 calories for the entire cake/brownie (without added chocolate chips)
6 grams of fat
9 grams of carbs (this counts the erythritol from the swerve sweetener, 4 grams of fiber, 2 sugars
12 grams protein

Sugar-Free Chocolate Cake
Ingredients
2 cups Lite&Sweet
1-3/4 cups all-purpose flour
3/4 cup cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Directions
1. Heat oven to 350F. Grease and flour two 9-inch round baking pans.
2. Stir together Lite&Sweet, flour, cocoa, baking powder, baking soda and salt in large bowl.
3. Next, add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes.
4. Stir in boiling water (batter will be thin).
5. Pour batter into prepared pans.
6. Bake for 35 minutes or until wooden stick inserted in center comes out clean.
7. Cool for 10 minutes; remove from pans to wire racks.
8. Allow to cool completely.
9. Frost with Lite&Sweet Chocolate Frosting.
Lite&Sweet Chocolate Frosting
1/2 cup (1 stick) butter
2/3 cup cocoa
3 cups powder Lite&Sweet
1/3 cup milk
1 teaspoon vanilla
Directions
Melt butter
Stir in cocoa
Add powdered Lite&Sweet and milk, beating to spreading consistency
Stir in vanilla

This recipe has so few carbs that when Dennis tested his blood sugar before eating and then one hour afterwards, his blood sugar dropped significantly at his post-meal test. Double Wow!!
Recipe for Chocolate Cake in-a-mug:
In a bowl mix the following ingredients:
- 1 egg
- 2 Tbsp Olive Oil
- 2 Tbsp heavy whipping cream
- 1 heaping Tbsp almond flour
- 1 heaping Tbsp coconut flour
- 1 heaping Tbsp cocoa (non-sweetened)
- 2 shakes of salt
- 2 packets of stevia or Truvia, or the sweetener of your choice
- 1 heaping Tbsp of sour cream
- 1/2 tsp of baking powder
- 2 squares of Bakers unsweetened chocolate, shaved into tiny pieces
To be placed on cake after baking:
- handful of chopped walnuts
- Whipped cream
Stir ingredients thoroughly in a bowl until smooth
Transfer the mixture into a large mug sprayed with cooking spray
Shake the mug a few times to get the mixture even with no lumps at the top
Bake in microwave for 90 seconds
Cut into four slices
Press walnut pieces into the cake
Top with whipped cream after the cake has cooled

This low-carb chocolate lava cake recipe is fast and easy to make, and it has almond flour instead of regular flour.
Some people have a tendency to go overboard with a treat after a meal and have way too much. This low-carb chocolate lava cake recipe makes a small batch of perfectly proportioned bite-sized chocolate cakes that you can have as easy treats over just a few days.
Chocolate Lava Cake Bites
Ingredients:
2 tbl almond flour
4 tsp cocoa powder
2 tbl powdered non-sugar sweetener of choice
1/8 tsp vanilla
1 tbl melted butter
1 large egg
3 tbl sugar-free chocolate chips
Directions:
Grease a mini muffin pan (8 wells) or use mini muffin cups.
Mix all dry ingredients. Mix all wet ingredients. Blend wet into dry and mix well with a wooden spoon. Fold in the chocolate chips.
Bake at 350 for 10-12 minutes or until the toothpick comes out clean. Gently remove and serve warm.
You can top it with sugar-free whipped cream (or lightly Stevia-sweetened organic whipped cream!).
