✅The preparation is very easy and quick. Here are the steps:
1. Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit) and line a baking pan with parchment paper or grease it with butter.
2. Take 3 apples (about 500 g in total), wash them well, and remove the cores. You can leave the peel on if you prefer.
3. Cut the apples into small pieces and put them in a food processor along with the eggs. Blend them until smooth.
4. Add the cottage cheese and the corn flour to the food processor and mix well. You can also add some cinnamon or vanilla extract for extra flavor if you like.
5. Pour the batter into the prepared baking pan and spread it evenly.
6. Slice the remaining apple and arrange it on top of the batter. Sprinkle some more cinnamon if desired.
7. Bake the pie in the oven for about 50 minutes or until golden and firm.
8. Let the pie cool completely before cutting into slices.

This cake has lovely flavors of apple backed by a hint of cinnamon and nutmeg. It is excellent by itself but is even better with a drizzle of custard over the top.
You should get roughly eight slices out of a single cake, which should be enough to feed six to eight people. If you need to feed more, then I recommend making multiple cakes.

1 apple, shredded
125g (4.4 oz) unsalted butter, chopped
125g (4.4 oz) caster sugar
1 tsp vanilla essence
2 eggs, at room temperature
300g (10.5 oz) gluten-free self-rising flour
1 tsp cinnamon, ground
½ tsp nutmeg, ground
200ml (6.8 fl oz) milk
1 apple, cored and sliced
There are lots of ways that you can alter this recipe so that it is better suited for your needs. Below are a couple of suggestions.
You can add more fruit to the cake for some more flavor. For example, shredded pear, mashed banana, or even raspberries will work nicely in this recipe. Feel free to experiment a little.

INGREDIENTS:
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon (optional)
2 large eggs
1/3 cup honey
4 tablespoons coconut oil
130 gram, 5 Oz (1/2 cup) greek yogurt
2 teaspoon pure vanilla extract
2 medium apples
1/2 cup chopped pecans
INSTRUCTIONS:
1. Grate the apples. Chop the pecans; set aside.
2. Preheat the oven to 340°F (170°C), and grease with oil a 9 inch loaf pan.
3. In a small bowl, combine whole wheat flour, baking soda, baking powder, cinnamon and kosher salt. Mix and set aside.
4. In a large bowl, add 2 eggs and whisk. Add honey, coconut oil, greek yogurt and pure vanilla extract. Whisk.
5. Add the dry ingredients and mix until well combined.
6. Add the grated apples and the chopped pecans to the batter. Mix gently.
7. Pour the batter on the loaf pan.
8. Bake for 40-50 minutes or until a tester inserted into the center comes out clean.
9. Let it cool in the pan for at least 20 minutes. Slice and serve. Enjoy :)

2 cups gluten-free oat flour
1 cup white rice flour
3/4 cup organic sugar
1 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground allspice
1/2 tsp. ground cloves
1/2 tsp. salt
1 1/2 cup unsweetened applesauce
1/4 cup oil (vegetable, canola, or light olive)
1/4 cup almond milk (or other non-dairy milk)
1 tsp. apple cider vinegar
1 tsp. vanilla extract
2/3 cup pecans, chopped
Frosting:
2 cups organic powdered sugar
2 Tbsp. vegan margarine
1 1/2 Tbsp. almond milk (or other non-dairy milk)
1 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl add, oat flour, rice flour, sugar, baking powder, cinnamon, allspice, cloves, and salt. Stir well. Add applesauce, oil, almond milk, apple cider vinegar, and vanilla. Stir well. Add pecans, and stir in. Pour the batter into a greased 8x8-inch baking pan, and spread smooth. Bake 40-45 minutes. Let cool. To make the frosting: to a bowl, add powdered sugar, and margarine. Cream together with an electric mixer. Add almond milk, and vanilla. Mix until smooth. Spread the frosting onto the completely cooled cake.
