How To make Fettucine with Shrimp and Goat's Cheese
12 ounces dried fettucine
6 ounces mild goat's cheese like Montrachet cut
into small pieces 1 1/2 cups seeded chopped ripe tomatoes
1/3 cup chiffonade of fresh basil
(packed)
Salt and dried red pepper flakes 1/3 cup olive oil
12 ounces uncooked shrimp :
peeled and deveined
and cut into 1/2-inch chunks 2 garlic cloves peeled
Slivered black oil cured olives :
for garnish
Bring a pot of salted water to a boil. Add the pasta and cook for about 10 minu tes or until al dente.
In a large serving bowl, mix the goat's cheese, tomatoes and basil; season with salt and dried red pepper flakes.
Meanwhile gently heat the olive oil; when warm add the garlic and shrimp and ge ntly poach in the oil, for about 3 minutes or until shrimp are done.
Drain pasta and add to mixing bowl with tomatoes, cheese and basil; add the shr imp and oil and toss; adjust the seasoning and garnish with black olives.

Ingredients List

500g - 1kg jumbo shrimp
300g penne pasta
1/2 Red and Green bell pepper
3 garlic cloves minced
Parsely to garnish
2 spring onions chopped
1 tbs oil to fry shrimp
1 tbs oil to sauté veggies
To season shrimp

1 tbs jerk seasoning
1 tsp old bay (can use all purpose seasoning)
1/2 tsp black pepper
1 tsp green seasoning
1/2 tsp salt
For Sauce
——————
2 cups double cream
1 1/2 - 2 cups grated cheese
1 tsp jerk seasoning (optional)
1 tsp old bay
1/2 tsp black pepper
2 tsp paprika
1 tsp all purpose seasoning

Goat Cheese Pesto Pasta with Shrimp and Prosciutto
Goat Cheese Pesto Pasta with Shrimp and Prosciutto
Pasta
1 pound box of linguini
6 slices of prosciutto
3 yellow squash, sliced
2 tablespoons of balsamic vinegar
1 serrano pepper
1 tablespoon of chopped rosemary
1 cup of store bought pesto or my Lemon Homemade Pesto
5 ounces of goat cheese
1/3 cup of grated parmesan cheese
Zest and juice of 1 lemon
Garnish with basil leaves
Shrimp
1 pound of shrimp, peeled and deveined
1/3 cup of olive oil
Zest and juice of 1 lemon
4 cloves of garlic, minced
1 tablespoon of chopped parsley
1 teaspoon of paprika
4 tablespoons of butter
In a large bowl, add the shrimp, olive oil, garlic, parsley, lemon juice and paprika and marinate for 30 minutes to 24 hours.
Preheat the oven to 375 F and place the prosciutto on a baking sheet with parchment paper. Bake for 8-10 minutes.
Bring a large pot of water to a boil. Read the instructions on the pasta box to cook al dente. Reserve 1 cup of pasta water.
Meanwhile, heat up a large skillet with oil and place the squash in and cook for 8 minutes, until golden brown. Season with salt and pepper. Reduce the heat to medium low and add the balsamic vinegar, Serrano pepper, and chopped rosemary and cook until the squash is glazed, 1-2 minutes longer. Turn the burner off but leave warm on the burner while you cook the shrimp.
Heat up the butter on another skillet for the shrimp. With a slotted spoon, place the shrimp and then cook 2-3 minutes on each side, until pink and opaque.
Add the drained pasta, goat cheese, pesto, parmesan, lemon zest and lemon juice. Add about 1/2 cup of pasta water and keep adding until you get your desired consistency and the heat from the water melts the goat cheese. Add salt and pepper to taste.
Set timers for the pasta and the prosciutto since this requires a ton of multitasking.
