Fiery Peach Salsa ~ Canning Salsa ~ Water Bath Canning ~ Steam Canning
As beautiful as it is delicious! A yummy summer treat to have on your shelf.
6 c. peeled and diced, hard under-ripe peaches
1 c. sugar
1 c. chopped red bell pepper
1 c. apple cider vinegar (5% acidity)
1/2 c. chopped red onion
1/2 c. water
1/4 c. fresh or bottled lime juice
1/4 t. salt
2 jalapeno peppers, seeded and finely chopped
2 cloves of minced garlic
1 habanero pepper, seeded and minced
1/4 c. chopped fresh cilantro
Ladle hot salsa into hot half-pint (8 oz) jars leaving 1/2 headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

Recipe
40-50 Dried Chili de Arbol
2 Roma Tomatoes Roasted
1tbl Vegetable Oil
2 Garlic Cloves
1/4tsp Cumin
1/4tsp Mexican Oregano
1/4tsp Salt
1qt Water
Toast chiles and rehydrate them in 1quart of water
Blacken tomatoes in cast iron skittet
Add cloves to skillet and blacken
Add all ingredients to blender and blend well with 1 cup of the chili water.
Add sugar if the mixture is bitter.
