1 c Sugar
1/2 c Shortening
2 Eggs
1 c Corn sirup
1/2 c Sour milk
3 c Cake flour
1 ts Baking powder
1 ts Ginger
1/2 ts Cloves
1/2 ts Cinnamon
1 ts Lemon flavoring
1 1/2 c Cooked dried figs
1/2 c Chopped nuts
1/2 ts Salt
1 ts Baking soda
Boil figs 10 minutes, drain, and slice fine. Cream sugar and shortening, add beaten eggs and sirup. Sift flour, measure, and sift with baking powder, baking soda, salt, and spices. Add alternately with milk to first mixture. Add flavoring, figs, and nuts. Beat thoroughly. Pour into well-oiled layer cake pans. Bake in moderate oven (375 F) about 20 minutes. Ice with ginger icing. If desired 1 1/2 cups soy or lima bean flour may be substituted for 1 1/2 cups

Rhubarb & Ginger Cake
Prep time: 15 mins (+ cooling time)
Cooking time: 30 mins
360g golden syrup
225g butter
200g brown sugar
1/2 bunch rhubarb, trimmed
Raw sugar, for sprinkling
280g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
2 tbs ground ginger
1/2 tsp ground allspice
1/2 ground nutmeg
1 tsp ground cinnamon
1/2 ground coriander
250ml milk
2 eggs
Icing sugar, for dusting
Mascarpone, dollop cream or yoghurt, for serving
1 Preheat oven to 170°C. Grease a 20cm (base measurement) round cake pan.
2 In a medium saucepan, place the golden syrup, butter and brown sugar over a low heat. Stir until the mixture is melted and the mixture is combined. Remove from heat.
3 Cut the rhubarb into 4cm-long batons. Sprinkle a pinch of raw sugar over the base of the cake pan, then arrange the rhubarb over the base of the pan.
4 In a bowl place, combine the flour, baking powder, bicarbonate of soda, ginger, allspice, nutmeg, cinnamon and coriander. In a separate bowl, whisk the milk and eggs until combined.
5 Pour the egg mixture into the flour mixture and use a whisk to stir, then add the warm golden syrup mixture until well combined and there are no lumps.
6 Gently pour the cake mix over the rhubarb, being careful not to move the rhubarb around. Fill to 1cm from the top of the pan. Bake for about 20-25 mins or until the top of the cake springs back when touched.
7 Allow the cake to cool in the pan for 5 mins before inverting onto a wire rack to cool completely.
8 Sprinkle with some icing sugar. Cut into wedges and serve with mascarpone, cream or yoghurt.

Making cake is my comfort zone because I did so much of it as a child when I was growing up with mum. My 88 year old Dad wanted another cake so I was inspired to use ginger and dried figs to come up with this hum dinger of cake. This cake rose so beautifully and the texture and taste was outstanding.
