How To make Filet Mignon with Pasilla Chile Bbq Sauce
4 filet mignon steaks -- (8 ounces each)
Salt and freshly ground black pepper to taste Pasilla Chile BBQ Sauce Pasilla Chile BBQ Sauce: 1 1/2 cups New Mexicostyle BBQ Sauce
2 tablespoons maple syrup
2 tablespoons pasilla chile powder
1/4 cup chopped cilantro
Mix all ingredients well and marinate filets for 1 hour. Prepare a wood or charcoal grill and let burn down to embers. Remove filets from BBQ sauce and cook on grill for 4 minutes on each side for medium rare.

Welcome back to my kitchen today I’m going to share with you how to make the best stovetop beef barbaco, in Mexico the authentic way is to cook it outside in a fire pit, here in Az is too hot to be outside cooking, I enjoy making this meal inside in the comfort of my home and let me tell you guys that it’s just as delicious! In Mexico this is our typical meal we like to serve at a quinceañera, bautismo or at a Birthday party! 3 lbs chuck pot roast
1 lb beef ribs
2-4 cups beef broth
5 anahaim peppers
10 Roma tomatoes
2 tomatillos
10 guajillos
2 pasilla
3 chile de árbol
1 white onion
2 tomatillos
5 garlic cloves
4 bay leaves
1 inch cinnamon stick
2 beef bouillon
5 all spice
8 cloves
1-2 tbsp salt
1 tsp black pepper
1 tsp cumin
1 tsp oregano
1/2 tsp thyme
1/2 tsp marjoram
1/2 tsp coriander
1/2 tsp whole pepper
6 carrots
1.5 lbs baby potatoes
