How To make Finikia (Semolina Honey Cookies)
125 g Butter
1/2 c Caster sugar
1 Orange (grated rind only)
1/2 c Corn or peanut oil
2 1/2 c Plain flour
4 ts Baking powder
1 1/2 c Fine semolina (farina)
1 ts Ground cinnamon
1 pn Ground cloves
1/2 c Orange juice
Toasted sesame seeds *or* Chopped walnuts
syrup:
1 c Water
1 c Sugar
1/2 c Honey
1 Piece of cinnamon bark
2 ts Lemon juice
Oven temperature: 180 C (350 F) Cooking time: 25 minutes Cream butter, sugar and orange rind until light and fluffy. Gradually add oil and continue to beat on high speed until mixture thickens to whipped cream consistency. Sift flour and baking powder twice and combine with semolina and spices. Gradually add to creamed mixture alternately with orange juice. When combined knead with hand to form a firm dough. Shape tablespoonfuls of dough into ovals, place on ungreased baking sheets and pinch ends to form torpedo shape. Bake in a moderate oven for 25 minutes until golden brown and crisp. Cool on baking sheets. In a pan stir water and sugar over heat until sugar dissolves. Add honey, cinnamon bark and lemon juice and bring to the boil. Boil over medium heat for 10 minutes and remove cinnamon. While syrup is boiling, dip cookies in 3 at a time, turn over in syrup, then remove to a rack placed over a dish. Repeat with number required for serving. Store remainder in a sealed container for later dipping. Sprinkle dipped cookies with sesame seeds or chopped walnuts and serve. Today I will share to you How to Make one of the popular greek sweet and this is #Melomakarona they usually made this on Christmas an New year but of course any season.. if you try this im sure you will love this using simple and easiest way.

heres all you need
Cookie Dough
600 grams Allpurpose flour
1/2 cup fine semolina (100grms)
1/2 tsp baking soda
1/8 tsp nutmeg
1/4 tsp cinnamon powder
1/8 cup fine sugar (25grms)
200 grams butter (melted)
3/4 cup orange juice (200ml)
1/2 cup olive oil (90ml)
orange rind of 1 orange
syrup
1 cup water
1 1/2 cup honey
1 1/2 cup white sugar
2-3 sticks of cinnamon
3-5 whole cloves
slice of orange
1 cup chopped wallnuts for toppings
cinnamon powder optional

Honey cookies (Melomakarona)
Honey cookies - Melomakarona - are Greek traditional Christmas cookies. They are soft and moist cake-like cookies, flavored with cognac and orange, soaked in honey syrup and sprinkled with walnuts. While baking them, sweet spices like cinnamon and clove, make your home smell heavenly :)
Ingredients:
For the syrup:
8.3 oz (235 g) sugar
6.8 us fl oz (200 ml) water
1 cinnamon stick
11.8 oz (335 g) honey
For the dough:
25.2 oz (715 g) all-purpose flour
2 tsp baking powder
1.5 tsp baking soda
1/2 cup (100 g) sugar
0.46 oz (13 g) powdered cinnamon
0.25 oz (7 g) clove (powder)
1/2 cup (100 ml) orange juice
1/2 cup (100 ml) cognac
2 cups (400 ml) sunflower oil
zest of two oranges
Make the syrup first.
In a pot add sugar, water and cinnamon stick. Stir and bring to a boil. Boil for 2-3 minutes, then stir in the honey and set aside to cool.
In a large bowl mix together flour, baking powder and baking soda. Stir to combine and then add sugar, cinnamon and clove. Mix to combine well.
In another bowl add orange juice, cognac, oil and orange zest. Mix well.
Gradually add flour mixture to liquid mixture. Don't overwork the dough. Only knead until the flour is fully incorporated.Dough will be soft but not too loose and it will be moist but not sticky.
Preheat the oven to 356 F (180 C) and line two baking trays with parchment paper.
Shape the cookies. Form them into oblong shape about the size of a walnut ( or bigger if you prefer). Lightly press the top of each cookie with the tines of a fork in a crosshatch pattern.
Bake cookies for 20 minutes.
While they are still very warm, soak them in cold honey syrup for 10-20 seconds.
Sprinkle melomakarona with chopped walnuts.
Store them at room temperature.
