add also 5 gr of salt and keep on mixing
the dough should remain sticky
Cover the bowl with plastic wrap and let the dough rise for 12 hours
now we take a baking sheet and brush with plenty of extra virgin olive oil (with these doses I did a baking sheet of 35 cm x 25 and a round baking pan with a diameter of 26 cm)
now we put some of the dough on the baking sheet oiled and with fingers well floured fold the outer edges inward to form a ball
brush with extra virgin olive oil and sprinkle with a little coarse salt.
let the dough rise for another two hours
now with the fingers gently press the dough to cover the baking dish
brush with the remaining oil the schiacciata. as you will notice in the dimples will tend to accumulate a little bit of oil.
bake in the oven at 200° C. for 15 minutes

Katie made her first pan of focaccia bread while we’ve been quarantined in our new apartment. It turned out to be so fun to make and even more fun to eat! Carbs just taste better when they’re homemade.
