How to Make Homemade Fortune Cookies | Get the Dish
Find out how to make your own homemade fortune cookies! Della Gossett, executive pastry chef at Wolfgang Puck's Spago Beverly Hills, shares her recipe for homemade fortune cookies. The process is similar to making tuile cookies. Be prepared to work quickly with nimble, fast fingers to fold your personalized fortunes into the malleable, freshly baked vanilla cookies. Otherwise, you may end up with a batch of malformed (albeit completely edible) fortune cookies.
Homemade Fortune Cookies

INGREDIENTS
1 cup all-purpose flour
1/4 cup rice flour
2 teaspoons cornstarch
1/2 teaspoon salt
1 cup sugar
4 egg whites
1/4 cup plus 2 tablespoons canola oil
3 tablespoons water
1 tablespoon vanilla extract
DIRECTIONS
Preheat oven to 350°F. In a large bowl, whisk together the flour, rice flour, cornstarch, salt, and sugar.
In a separate bowl, whisk together the egg whites until frothy. Set aside.
Create a well in the middle of the dry ingredients. Pour the canola oil, water, and vanilla extract into the center. Use a rubber spatula to stir the wet ingredients. Eventually incorporate the dry ingredients along the sides of the bowl. Stir until all the dry ingredients are well blended.The batter will be stiff. Add half of the egg whites. Mix well to break up any lumps. When smooth, incorporate the remaining egg whites. Mix until smooth.
Pipe or spoon the batter about the size of a quarter onto a nonstick baking sheet, leaving about 3 inches of space in between each spoonful of batter. Using the back of a spoon, spread the batter in a circular motion outward to make it as thin as possible without creating holes in the batter. Bake for approximately 8 to 10 minutes until slightly brown around the edges.
Remove from oven and with an offset spatula, carefully and quickly scrape the fortune circles off the nonstick sheet and flip them over. Place a fortune strip in the center of the cookie. Immediately fold them in half slightly and crease the middle of the cookie on the edge of the hot pan or a cup to shape. Place the folded fortune cookies into a muffin pan to cool (so they won't lose their shape). Store in an airtight container for up to 1 week.

Hi, everyone :) Today we’re going to show you how to make a fortune cookie at home.
Fortune cookie is fun and easy to make at home!! Especially when you're looking for a treat to surprise to your family or your friend. You can put your own quotes inside the cookies, and give it to a friend, a lover, a family as a gift. So interesting, right?
There is a tip to making fortune cookies, which is when they come out of the oven, you have to work very quickly because they’re folded individually while they’re very hot. Our recommendation is to wear a pairs gloves, it will help you to make easily.
Fortune cookie is ideal for any occasion, like parties, birthdays, weddings, Valentine’s day and so on. Fill these Homemade Fortune Cookies with your own personal fortunes for a fun and delicious treat! Hope your enjoy this video. :)

Ingredients:
egg whites 2
sugar 100g
all-purpose flour 63g
cornstarch 3g
rice flour 20g
salt 1.5g
vegetable oil 32g
Water 25g
Vanilla extract 5g
Instructions
1. Add the egg whites and vanilla extract, water, vegetable oil to a bowl and use a whisk to beat until frothy. Set aside.
2. In a medium bowl, sift in all-purpose flour and rice flour, cornstarch, use a whisk to incorporate all dry ingredients.
3. Add sugar and salt, mix well.
4. Use your hand to create a well in middle of dry ingredients.
5. Add about half egg white mixture, smash that together and stir well.
6. Pour the rest of egg white mixture, stir until smooth.
7. Place 1 tablespoon of batter onto a baking sheet and use a spoon to spread into 9 cm circle.
8. Repeat with another batter circle, do not make too many, because you just have a little time to fold them. Two is ideal.
9. Preheat oven to 170C, bake for 10-11 minutes or until the edges become golden brown.
11. Work quickly, first flip them over, it's easier to put the fortune in the middle, and then fold the cookies in half.
12. Use a cup to fold and bend a fortune cookie into shape.
13. Put the folded fortune cookies in a small muffin or tart pan to hold the shape until firm. It's done.

Fortune Cookies Recipe (No Oven)
This might be the only Fortune Cookie recipe that is made without the oven!

(makes about 12-15 fortune cookies)
INGREDIENTS
1 egg white
1/8 tsp vanilla extract/ essence
1/4 cup flour (sifted)
pinch of salt
3 tbsp sugar
some FORTUNES! (optional)
PREPARATION
1. Into a medium bowl, add in the egg white & vanilla extract/ essence and whisk until foamy (not too foamy & stiff).
2. Then add in the sifted flour, salt & sugar and whisk until combined. (If the batter is too thick, add in a little bit of water to make the batter smooth and runny)
3. Lightly grease a non-stick skillet over low heat. Add about a teaspoonful of batter onto the heated skillet and spread it to make a thin, even circle. (Try to make the disc as thin as possible otherwise the cookie won't be crispy)
4. Cook both sides until golden.
5. After cooking both sides until golden, this is the part where you have to work quick! Take out the disc from the skillet (place the smooth side of the disc down) & place a fortune in the middle of the disc. Then bring the two sides of the disc to fold it in half. Place the folded edge across the rim of a mug and pull the pointed edges down the sides of the mug. Finally, place the fortune cookie in a muffin tray or in an egg carton until the cookie has hardened in its shape.
6. Eat right-away & when leaving the cookies to harden in the egg carton, don't leave it for too long because it will be soft. Try to place the hardened fortune cookies in an airtight container until consumed. The fortune cookies are best consumed on the day they are made.
