How To make Fried Apples & Onions
1/2 lb Bacon; sliced
2 lb Onions
2 lb Apples; tart, chopped
2 tb Sugar, brown
Salt pork may be substituted for the bacon. Fry bacon slices in 12" skillet until brown and crisp. Set aside on a warm serving platter. While meat is frying, peel onions, leaving stems to hold for slicing. To prevent your eyes from watering, hold a slice of bread in your teeth while you slice the onions as thin as possible. Discard stems. Core apples and cut crosswise in circles about 1/4" thick. Apple skins help the slices hold their shape and add color to the dish, so don't peel unless skins are tough or scarred. Drain all but 1 tb fat from skillet, then add onion slices. Cook over medium-high heat about 3 minutes. Cover with apple slices in an even layer. Sprinkle brown sugar over all, cover skillet, & cook until tender, a few minutes more. Stir only to prevent scorching. Remove to warm plate with bacon slices. This is a "country" dish, seldom mentioned in cookbooks but recalled by many oldtimers. Some feel sugar is essential; others call it a "sin." We had recently blessed some old timers up the street with some hot-smoked venison backstrap, along with some butter, mushrooms, and onions so they'd have a meal to enjoy. In return, they sent over a bag of apples, onions, and butter, and told Red-Pepper how to make a dish from them. We'd been hearing about fried apples and onions while listening to Farmer Boy while we processed some deer together as a family, and were hoping to try that anyway. One-Pan Juicy Pork Chop with Onions and Apples
This one-pan pork chop with apples and onions has the best combination for any season of the year and is the perfect go-to weeknight dinner! The pork chops are juicy and tender and go super well with the balance of the sweetness and sourness from the 2 different types of apples. It is so easy to make is packed with flavors. In addition, the aromatic from the thyme and rosemary takes the dish to another level, making it the best version of pork chop with onions and apples.
Ingredients
4-6 (in total about 1-1.5 lbs) Bone-in Pork Chop
1 Granny Smith Apple
1 Honeycrisp Apple
1 Medium Red Onion
½ tsp Salt
¼ tsp Pepper
1 Tbsp Olive oil
2 Tbsp Butter
1 Tbsp Brown Sugar
3 sprigs Thyme (reserve 1 sprig leaves chopped for garnish)
3 sprigs Rosemary (reserve 1 sprig for garnish)
2 tbsp Apple cider Vinegar

Easy! Apple & Onion Sauté
This tasty combination of brown sugar, apple and onion is a comforting side or topping for Pork Chops & one of my wife’s favorite on Burgers with Melted Sharp Cheese, Bacon & light Honey Mustard.
* Ingredients
2 medium onions, sliced
1 tablespoon brown sugar
2 tablespoons butter
2 large tart apples, peeled and sliced
1 Lime cut in 1/2
1/8 teaspoon cinnamon
* Directions
In a small saucepan, cook onions, brown sugar and cinnamon in butter over medium-low heat for 8-10 minutes or until onions are tender. Stir in the apples, and squeezed lime juice. Cover and simmer for 10 minutes or until apples are tender.

This recipe comes from The Little House Cookbook, by Barbara M. Walker. She got the idea from Farmer Boy, where Laura writes that it was Almanzo's favorite.
What I love about this recipe: All of the ingredients go so well with together with the Onions, my favorite part.
What I'll do differently next time: I will probably save a little bit more of the bacon grease to cook onions in next time.
