How To make Fried Apples & Onions
1/2 lb Bacon; sliced
2 lb Onions
2 lb Apples; tart, chopped
2 tb Sugar, brown
Salt pork may be substituted for the bacon. Fry bacon slices in 12" skillet until brown and crisp. Set aside on a warm serving platter. While meat is frying, peel onions, leaving stems to hold for slicing. To prevent your eyes from watering, hold a slice of bread in your teeth while you slice the onions as thin as possible. Discard stems. Core apples and cut crosswise in circles about 1/4" thick. Apple skins help the slices hold their shape and add color to the dish, so don't peel unless skins are tough or scarred. Drain all but 1 tb fat from skillet, then add onion slices. Cook over medium-high heat about 3 minutes. Cover with apple slices in an even layer. Sprinkle brown sugar over all, cover skillet, & cook until tender, a few minutes more. Stir only to prevent scorching. Remove to warm plate with bacon slices. This is a "country" dish, seldom mentioned in cookbooks but recalled by many oldtimers. Some feel sugar is essential; others call it a "sin." Pork Chops with Apple and Cinnamon in 30 Minutes
Apple cinnamon pork chops are one of my favorite dishes. I often have apple sauce with my chops and this seems to capture the best of both worlds. The great thing is they can be made up in under 30 minutes which makes them a great midweek meal. Without a doubt, your family and dinner guests will love them.
As always, there are a few changes you can make to the dish. In example, along with cinnamon nutmeg can be added. I just tried to keep things as simple as possible. If you like them sweeter, add a bit more sugar; if not, add less. You could also add some caramelized onions; although, I'm not too sure if this would be a perfect match.

Fried Apples n' Onions
This recipe comes from The Little House Cookbook, by Barbara M. Walker. She got the idea from Farmer Boy, where Laura writes that it was Almanzo's favorite.
What I love about this recipe: All of the ingredients go so well with together with the Onions, my favorite part.
What I'll do differently next time: I will probably save a little bit more of the bacon grease to cook onions in next time.
Pork Chops with Apples Recipe
Pork Chops with apples is an incredibly combination of delicious savory and sweet flavors that make for the easiest and best weeknight meal.
Ingredients for this recipe:
• 4 thick cut bone in pork chops
• 2 tablespoons olive oil
• 2 tablespoons unsalted butter
• 4-6 sprigs fresh thyme
• ½ recipe baked apples
• sea salt and pepper to taste
Serves 4
Prep Time: 5 minutes
Cook Time: 45 minutes
Procedures:
1. Make the a ½ recipe for baked apples and keep warm.
2. Season the pork chops on both sides with salt and pepper.
3. Add the olive oil to a large frying pan over high heat and once it begins to lightly smoke, add in the pork chops and turn the head down to medium-high heat.
4. Add in the butter and thyme and cook for 7-8 minutes per side or until golden brown and the desired internal temperature is achieved.
5. Rest the pork for 3-4 minutes before serving with the baked apples.
CHEF NOTES:
• How To Reheat: Add the pork chops and apples to a pan with a lid and bake in the oven at 350° for 10-12 minutes or until hot.
• Make Ahead: It is best to serve this recipe as soon as it’s ready, but you can make it up to 1 day ahead of time, simply keep covered in the refrigerator until ready to reheat and serve.
• How To Store: Cover and keep in the refrigerator for up to 4 days.
• I personally enjoy a combination of tart and sweet apples when making them, but feel free to use what you like.
