How To make Fried Eggplant Sandwiches
1 Eggplant
Salt 6 oz Mozzarella cheese
(not grated) 1/2 ts Yeast
1 1/2 c Warm water
(105-115 degrees) 2 c Plain flour
Pepper to taste 4 1/2 tb Oil
1 lg Egg white
Oil for frying Slice the eggplant into 1/4" rounds. Sprinkle with salt and let drain in a colandar for about an hour. Slice the mozzarella into thin slices and trim to the shape of the eggplant slices. Sprinkle the yeast over the warm water abd stir until is dissolved. Whisk in 1 1/2 cups flour and the pepper until smooth. Keep at room temp for 30
min. Rinse and pat dry the eggplant slices. Fry them in batches using 1 T oil per batch over medium heat about 2 min per side. Remove to paper towels to drain while you finish the other slices. Place a cheese slice between each two eggplant slices (like a sandwich). Press firmly together and dip in the remaining flour to coat both sides. Beat the egg white until stiff (but not dry) peaks form. Fold into the yeast mixture. Heat oil (about 1 inch deep) in a large frying pan. Dip 1 eggplant sandwich into the batter at a time and place in the hot oil. Fry 4-6 at a time for 1-2 minutes per side until light brown. Place on paper towels to drain oil until all are done. Serve hot. These are great with a horseradish type dressing on top! Depending on the size of the eggplant, this could make 6-12 sandwiches. Walt MM

I’ve kept the recipe low-key considering the availability of the ingredients in your area, especially in this pandemic and lockdown in Bhutan.
I would highly recommend you to try this Crispy Fried Eggplant Sandwich recipe because it's delicious and worth trying even if you are not a big fan of eggplant.
I am not a big fan of eggplant but I’ve become a huge fan of fried eggplant cutlets and they taste better with the bread and other some fresh veggies.
In this recipe, I’ve also added some roasted bell peppers marinated in olive oil and garlic for more flavour, if you don’t have those you can replace them with other veggies.

Tips and tricks to get a perfect cutlet are:
1. Keep one hand dry and one hand wet. Put wet hand in a wet ingredient i.e., egg and put dry hand in dry ingredients i.e. are Maida and breadcrumbs.
Bottom line, use a dry hand in dry ingredients only and wet into wet ingredients only.
When I first time-tired making cutlets, I didn’t know about this & I used both my hands in wet and dry ingredients & the result was so disappointing.
My dry ingredients turned into wet and they didn’t coat well on the eggplants. So, I don’t want you to go through the same trouble.
2. After coating, if you find wet spot re-coat them.

Ingredients:
1 large eggplant | 550g |19oz
2 green onions
1 garlic clove
1cup | 3.5oz | 100g vegan cheddar cheese
2 tbsp parsley
1 tsp salt
¼ tsp black pepper
1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs
Oil for frying
Method:
Peel and cut 1 large eggplant ???? or 2 medium eggplants | 550g | 19 oz
Cut 2 green onions and 1 garlic clove ????
Heat oil in a large skillet over medium-high heat. Add onion and sauté until translucent.
Add garlic and sauté until fragrant.
Add eggplant cubes and sauté until browned and soft for about 10-12 minutes.
Then transfer to a large bowl and mash.
Grate 100g | 3.5oz vegan cheddar cheese ????
Chop 2 tbsp of parsley.
Add 1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs. I prefer chickpea crumbs.
Salt and pepper to taste.
Mix well
Transfer the mixture to the fridge for 20-30 minutes to allow the breadcrumbs or chickpeas crumbs to suck up some of the moisture.
Form the patties with your hands.
Fry patties for about 4 minutes on each side until golden brown and enjoy!
