Piña Colada Cake - Easy Puerto Rican Recipe
Welcome summer! Who does not love sipping on a piña colada on a hot summer day? Well, today we are sharing the perfect dessert that you can enjoy on that hot summer day! This cake recipe was inspired by our tres leches cake recipe, but we are adding a summer flavor to it! It's super easy to make ahead and you are going to love that perfect combination of airy spongy cake soaked in piña colada flavors. Enjoy!
Ingredients:
Cake:
1 cup all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
5 large eggs
1 cup sugar divided into 3/4 and 1/4 cups
½ tsp vanilla extract
½ tsp coconut extract
1/3 cup buttermilk
Pina Colada Syrup:
1 cup pineapple juice
½ cup coconut milk (select the one with the highest fat content)
¼ cup sweetened condensed milk
Frosting:
2 cups heavy whipping cream
½ cup powdered sugar
Maraschino cherries to garnish, optional
Pineapple chunks to garnish, optional
Toasted coconut to garnish, optional

A Simple (Pink) Piña Colada Recipe
For Valentine's day, we're making a (naturally) PINK piña colada with a rare pink pineapple.
Don't worry folks, the pink pineapple isn't mandatory for this recipe and is only necessary for the cute pink aesthetic.
This recipe is incredibly simple and offers a lot of flexibility especially if you don't have a coconut in your back pocket

Recipe
- 6oz coconut cream
- 2oz coconut milk
(substitute: if you don't have coconut cream or milk, use 2 scoops of vanilla ice cream and 6oz of milk)
- 2 red dates (or sugar of your choice)
- 1 quartered lime for lime juice (~1/2 tablespoon)
- 1 cup of ice
Toppings
- whipped cream
- 1 pack of strawberry pocky, dusted
- 2 sticks of strawberry pocky
- 1 strawberry for decoration

Instructions
1. Peel your pineapple and cut into chunks
2. Freeze pineapple chunks in a ziplock bag for 3 hours (optional: if you skip this step, you can add more ice during the blending step)
3. Blend a pack of strawberry pocky to make a crumbly powder for topping
4. Add to blender container:
- 6oz coconut cream
- 2oz coconut milk
- 2 red dates
- lime juice from a quarter of a lime
- 1 cup ice
Blend ingredients until smooth
5. Serve pina colada in a cup
6. Top with whip cream
7. Sprinkle strawberry pocky powder
8. Place 2 halves of strawberry pocky into whipped cream
9. Decorate side of glass with a strawberry
10. Serve

Betty's Frosty Piña Coladas
Betty demonstrates how to make Piña Coladas. This is a frosty drink made with pineapple, coconut, and rum flavors.
Piña Coladas
8 ounces cream of coconut
8 ounces crushed pineapple or pineapple tidbits, undrained
½ cup flaked coconut
¼ cup light rum
¼ cup milk
1 tablespoon confectioner’s sugar (This is the same as powdered sugar or icing sugar.)
crushed ice, equivalent to 15 to 20 ice cubes
Place all ingredients in bowl of electric blender. Process until smooth and thickened. Pour into dessert glass and serve immediately. This recipe makes about 4 cups. Enjoy! --Betty :)
