Homemade Funnel Cakes Recipe:
Yield: Makes 6 eight-inch funnel cakes
Ingredients:
vegetable oil, for frying
2.5 cups all-purpose flour
¼ cup sugar
2 teaspoons baking powder
¼ teaspoon salt
2 large eggs
2 cups milk
1 teaspoon vanilla extract
confectioner’s sugar, for dusting
Directions:
Heat 1” of vegetable oil in a cast-iron skillet to 375 degrees F.
In a large bowl, whisk to combine the flour, sugar, baking powder, and salt. Set aside.
In another bowl, whisk to blend the eggs, then add the milk and vanilla extract and whisk. Add the dry ingredients to the wet, then whisk until a smooth batter forms.
Stop the bottom of the funnel spout with your finger, and pour ½ cup batter into the funnel and holding the funnel a couple inches above the oil, move in a circular motion around the pan. Fry for 2 minutes on each side, until golden brown. Drain on paper towels for a couple minutes, then sprinkle with lots of confectioner’s sugar when you’re ready to serve. Enjoy!

1/8 tsp. of salt (less than 1 g)

Ingredients
2 cups all-purpose flour 250g
2 Tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk 236ml¹(see note!)
2 large eggs lightly beaten
1/2 teaspoon vanilla extract optional
Vegetable oil for frying
Powdered sugar for dusting funnel cakes
Instructions
00:00 Introduction
00:30 In a medium-sized bowl, whisk together flour, sugar, baking powder, and salt until well-combined.
00:52 In a separate bowl, whisk together milk, eggs, and vanilla extract (if using) until well-combined.
01:24 While whisking, gradually add dry ingredients to wet, stirring until mixture is smooth and combined (see note about milk!). Set aside.
01:49 Fill a medium-sized saucepan 2-3” deep with vegetable oil. Set on stovetop over medium-low heat and place a candy thermometer in the oil (make sure the tip of the thermometer is in the middle of the oil and not touching the bottom or it will read hotter than the actual temperature of the oil). Heat oil to 370-375F (187-190C).
02:45 Once oil is heated, portion about 1/3 - ½ cup of batter into a measuring cup with a spout. Slowly drizzle batter into oil, swirling and criss-crossing the batter over itself. Fry on each side until golden brown (about 90 seconds per side) then remove to a paper-towel lined plate.
04:12 Repeat with remaining batter but make sure that oil returns to temperature in between batches.
04:19 Dust with powdered sugar and serve warm.
NOTES:
¹You can see me on camera making this recipe with the exact ingredient quantities listed. I tested this recipe over a dozen times with the ingredients as written. However, sometimes the batter comes out too thick for people. If your batter is thicker than shown in the video, add additional milk as needed until it reaches a pourable consistency like shown in the video.

How to Make Funnel Cakes!!
Just like the ones you get at the fair! This recipe comes from an old Pennsylvania Dutch cookbook that was in my grandmothers collection from Dutch Pantry Restaurants. These are super simple to make, only take a couple minutes to fry up and are a great treat for kids. These do not keep well so only make what you will eat immediately. Batter can be stored in the fridge for later use (up to two days).
What you'll need:
3 large eggs
2 cups milk
1/4 cup granulated sugar
3 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
oil for frying
powdered sugar for dusting or toppings of your choice
Whisk everything together in a large bowl until no lumps remain. Batter should be smooth. Pour batter into a funnel with a 7/16 hole making sure to plug the hole with your finger. Using a larger funnel makes the funnel cake strands too big and doughy and a smaller funnel makes them too small and crispy. Heat oil to 350*F in a medium saucepan or cast iron skillet. Holding the funnel about 1 above the oil, quickly swirl and zigzag the batter around in the oil. Fill in any large voids but leave some smaller ones. Each funnel cake should use about 1/2 cup batter if using an 8 pan. Fry until golden brown on the first side, about 1 minute. Carefully turn and continue frying until golden brown on the second side. Drain and serve on double layer of paper plates. Dust with powdered sugar or toppings of your choice! Makes about 9 (8) funnel cakes. Enjoy!

Funnel Cake is a classic carnival favorite that my kids love! The secret is you can make it fresh at home with this Funnel Cake Recipe! The smell of funnel cake is intoxicating and this easy crispy, fried dessert puts smiles on every ones face.

Ingredients:
1/4 cup whole milk
1 tbsp water
2 large eggs
1 tsp vanilla extract
1 1/2 tbsp granulated sugar
1 tsp baking powder
pinch of salt
1/2 cup all-purpose flour
5 tbsp powdered sugar (for garnish)
strawberries (for garnish)
whipped cream (for garnish)
vegetable oil (for frying)
Instructions:
1. In a large mixing bowl, whisk together the wet ingredients. Once combined, add in the dry ingredients except for the flour. Whisk together until combined. Lastly, add in the flour and whisk until entirely smooth and set aside. Pour funnel cake batter into a large liquid measuring cup (this will make it easier to transfer into your plastic squirt bottle). Then pour funnel cake batter into plastic squirt bottle and place cap on.
2. In a deep skillet or pot, heat up about an inch of vegetable oil to 375F. Drizzle batter from the squirt bottle in a continuous thin line and swirl around the pan and overlap. Cook each side for about 2 minute or until the funnel cakes reach a gold brown color.
3. Dust the cakes with powdered sugar, whipped cream, strawberries and serve hot.
