MALA Hot Sauce - Numbing Spicy Aromatic Chili Oil for Chinese Szechuan Sichuan Cuisine | 四川香浓麻辣醬

MALA sauce is an aromatic, spice infused oil-based hot sauce for most Szechuan dishes. MALA (麻辣) means numbing and spicy. After tasting the sauce, it leaves you with a tingling, numbing sensation in your mouth. Besides the spiciness, homemade MALA sauce also has rich layers of other aromatic flavors.
MALA Xiang Guo video:
INGREDIENTS - This recipe makes 2 1/2 cups of concentrated MALA sauce
4 tbsp Szechuan peppercorns
4 tbsp red chili flakes (Szechuan or any variety)
2 tbsp fennel seeds
A few star anise
3 bay leaves
2 cups peanut oil or other vegetable oil
1 tsp salt

Chili con carne from hell. Duivels hete chili!
Een authentieke Mexicaanse chili con carne, maar dan gemaakt met de heetste peper ter wereld: de Carolina reaper! Deze chili is niet voor watjes en zet je vuur en vlam, maar natuurlijk kun je in plaats van de Carolina reaper ook een Spaanse peper of een Jalapeño gebruiken.
Ik laat je in deze video meteen zien hoe je het beste een burrito vouwt, zodat je deze zonder knoeien en morsen op kunt eten.

INGREDIENTS/RECIPE:
Start with 2 onions, diced however large or small you like. Throw em' in a big stock pot with a little oil, some salt, and a hefty portion of chili powder. Cook em' on medium heat until translucent.
Next, mince up a whole head of garlic and throw all of it in there.
MEAT TIME!
This varies, but I generally use 2.5 lbs ground beef and 1.5 lb ground pork. Pork seems is the star of the show, you need as much fat as you can get in there to help ease up on the heat. Toss that shit in there, stir it around and brown it.
Now we add the hot peppers and seasoning:
More chili powder
5 Jalapenos, minced
5 Serranos, minced
1 Tbsp ground cayenne
1 Tbsp ground bird's eye
5 Habaneros, minced
1 Tbsp ground 7 pot pepper
1 Bhut Jolokia Ghost chili, minced or crushed
1 Carolina Reaper, minced or crushed
1 Trinidad Scorpion, minced or crushed
1 Moruga Scorpion, minced or crushed
I left the seeds in, but feel free to remove some of them if you want a little less heat.
Now would be a good time to open some windows and WASH YOUR FUCKING HANDS!
Next, dice up and add about 4 pounds of fresh tomatoes. Any variety will be fine, I usually just go with whatever looks the best.
Now we add the mild peppers:
3 poblanos, diced
2 bell peppers (any color), diced
**Season to taste, I use:
Salt
Black Pepper
Chili powder
Smoked Habanero powder (substitute Cayenne if needed)
Cocoa powder
Hot Paprika
Cover and simmer for as long as you'd like, the longer the better. 1 hour minimum.
Add da beans, your preference. I use:
2 cans kidney, rinsed
2 cans red, rinsed
2 cans black, rinsed
Give the beans a little bit of time to warm up, check seasoning again, and BAM, killer chili that'll destroy you from the inside out. Serve with cheddar cheese and sour cream if you care about your loved ones.
