Let's Bake Lemon Squares for a Family Celebration!

Recipe
Makes one 9-inch (23 cm) square pan
Cuts into 25 or 36 squares
Ingredients
Base
1 cup (150 g) all-purpose flour
¼ cup (50 g) granulated sugar
½ cup (115 g) cold unsalted butter, cut into pieces
Filling
½ pkg (4 oz/120 g) cream cheese, at room temperature
1 ½ cups (300 g) granulated sugar
¼ cup (38 g) all-purpose flour
finely grated zest of 1 lemon
½ tsp baking powder
½ cup (125 mL) fresh lemon juice
4 large eggs
Directions
1. Preheat the oven to 350 °F. Grease and line a 9-inch (23 cm) square pan with parchment paper so that the paper comes up the sides.
2. To prepare the base, pulse the flour and sugar in a food processor to combine. Add the butter and pulse it until the mixture is an even crumbly texture, but the dough should not come together. Press this into the prepared pan.
3. Bake for 15 to 18 minutes until the base turns golden around the edges. Prepare the filling while the crust cools.
4. In a food processor, pulse the cream cheese with ½ cup (100 g) of the sugar until smooth. Add the remaining 1 cup (200 g) of sugar, the flour, lemon zest and baking powder and blend. Add the lemon juice and eggs and blend until smooth, scraping down the sides of the processor once or twice. Pour the filling over the cooled crust.
5. Bake for 35 to 40 minutes, until the edges are set and just show signs of soufflé-ing a little, but the centre should still have a bit of a jiggle to it. Cool the squares to room temperature before chilling for at least 3 hours before slicing.
The square can be kept refrigerated for up to 3 days

SHORTBREAD CRUST:
• 1/2 cup sugar
• salted butter, sliced
• 2 cups flour
LEMON LAYER:
• 1½ cups sugar
• 1/4 cup flour
• 4 large eggs
• 1 cup lemon juice
✅Ingredients
1️⃣ 00:00:14 - Preheat oven to 350 degrees. Line a 9x9 baking pan with parchment paper.
2️⃣ 00:00:22 - In a medium-sized mixing bowl use a pastry cutter to combine the butter, 1/2 cup sugar, and 2 cups flour, or use a food processor. Press this dough into the bottom of the 9x9 pan. Bake for 15 minutes.
3️⃣ 00:01:15 - Five minutes before the crust is done baking, mix together the 1½ cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice.
4️⃣ 00:01:57 - Gently pour the lemon mixture over the baked crust and return to the oven and bake until lemon layer is set, about 40-50 minutes.
5️⃣ 00:02:51 - Let cool completely before dusting the tops with additional powdered sugar, if desired.

Super Easy Creamy Lemon Bars so luscious that melts in your mouth
How to make a luscious Lemon Bars.
Here's what you'll need:
CRUST:
2 cups crushed graham crackers (200g)
3 tbsp sugar (45g)
1/3 cup melted butter (75ml)
FILLING:
1 and a half cup sweetened condensed milk (460g)
3 egg yolks
1/2 tsp vanilla extract (3ml)
1 tbsp cornstarch (7g)
2 tsp lemon zest
1/2 cup fresh lemon juice (125ml)
1. Preheat oven at 170°C/340°F.
2. Line an 8x8 inches square pan or any pan you have.
3. Mix crushed graham crackers, sugar and melted butter.
4. Press mixture onto prepared pan.
5. Bake for 15 minutes.
6. Set aside to cool down.
7. Let's make the filling. Preheat oven at 170°C/340°F.
8. In a mixing bowl, mix together sweetened condensed milk, egg yolks, vanilla, cornstarch and lemon zest.
9. Then gradually add fresh lemon juice. Mix until smooth.
10. Place batter in a cooled crust.
11. Bake in a preheated oven for 18 minutes or until set.
12. Let it cool down completely. Chill for at least 2 hours or overnight.
13. Serve and enjoy!
