How To make Grilled Chicken Sandwich with Smoky Red Onion Salsa
---------------------------SMOKY RED-ONION SALSA;--------------------------- 1 sm Red onion, cut into 4 slices
1 Tomato, cut into 4 slices
6 tb Fresh lime juice
1/4 c Chopped fresh cilantro
4 ds Red pepper sauce (up to 10)
Salt and cracked black -pepper
SANDWICH:
3 tb Chili powder
1 tb Cumin
1 tb Cracked black pepper
4 Boneless, skinless
-chicken-breast halves (1 -1/4 lb.) Salt 8 sl Sourdough bread,
-1/2-inch-thick 1/4 c Mayonnaise
Assorted baby lettuces
1. Heat grill.
2. Make Smoky Red-Onion Salsa: Grill onion and tomato slices 2 minutes per
side. Chop coarsely and transfer to bowl. Stir in remaining ingredients. Makes 2 cups.
3. Combine chili powder, cumin and pepper in small bowl. Rub all over
chicken. Sprinkle with salt.
4. Grill chicken over medium-hot heat until cooked through, 4 to 5 minutes
per side. Grill bread until golden, 30 to 60 seconds per side.
5. Top 4 bread slices with mayonnaise, lettuces, chicken, then salsa. Top
with remaining bread.

Coleslaw Recipe: make day before serving
Dressing: In a large bowl
- 1/2 cup of mayonnaise
- 2 Tbs. of red wine vinegar
- 1 Tbs. of dijon mustard
- 2 tsp. of Cholula Hot Sauce
- 2 tsp. of Slap Ya Mama cajun seasoning
- mix all well
Add:
- 16 oz. bag of coleslaw mix
- 1/4 of a red onion finely diced- 3/4 of a cup
- 5 oz. of dried cranberries
- 1 Honeycrisp apple, peeled, cored and cubed
- Mix all well. cover and store in refrigerator overnight
- stir before serving
Grilled Chicken Sandwich:
- In a heavy ziplock bag flatten boneless skinless chicken breast to a 1/2
- add 2 oz. of Italian dressing to the bag, remove air, zip up and let it marinate for at least 2 hours
- Remove the chicken from the bag, pat dry with paper towel
- Season both sides with Slap Ya Mama cajun seasoning
- cut in half to make 2 sandwiches
- place on hot grill for approximately 3 minutes
- flip, brush with your favourite BBQ sauce
- lay sliced provolone cheese on top
- cook approximately another 3 minutes until internal temperature is 165F
- brush Brioche bun with melted garlic butter and toast on the grill to golden brown
- place a piece of chicken on the bottom of the bun
- place a generous helping of The Best Darn Coleslaw on top of the chicken, top with bun. OH MY! Mouth watering! Enjoy and thanks for watching. Pete.

Ingredients Needed for Sandwich:
- 1 Chicken Breast
- 1 Brioche Bun
- 2 slices of Cheddar Cheese
- A few slices of thinly sliced Red Onion
- 1 chopped Green Onion
For Wet Rub:
- 2 tablespoons of Olive Oil
- 1 teaspoon of Garlic Powder
- 1 teaspoon of Onion Powder
- 1 teaspoon of course Black Pepper
- 3/4 teaspoon of Smoked Paprika (regular Paprika is also fine)
- 1 teaspoon of El Yucateco Red
For Sauce:
- 1/4 cup Mayo
- 2 teaspoons of El Yucateco Red
Instructions:
Always wash your hands before prepping any food recipe. Begin by making the Wet Rub. Combine all ingredients listed above into a bowl and use a whisk or spoon to mix together well until everything has dissolved and taken on a paste type consistency. Next, make the sauce by combining the ingredients and mixing well, then chill in the fridge until it's time to use it.
Trim the Chicken Breast by removing any hard fat from the exterior. Now, butterfly the chicken breast as shown in the video. Apply the wet rub to all surfaces of the chicken breast as shown in the video. Allow this to sit while you preheat the grill to high heat, make sure your grill is clean and safe to run at high temperatures. Place chicken on grill and allow to cook for several minutes. Once you see the chicken beginning to take on color and moisture pooling on the top, give it a quarter turn (for grill marks). After a few more minutes, flip the chicken to cook the other side. Monitor the chicken temps with a meat thermometer and make sure it's cooked to a safe temperature. Once it's safe, place two slices of cheese on top and allow to melt. Once melted, build your chicken sandwich, make sure to add the sauce to the bun and ENJOY!

If you love garlic and love Parmigiano-Reggiano then this sandwich is for you. Every time I went for wings and they had garpar sauce on the menu, it was hard for me to say no. I figured, why not turn garpar wings, which I love, into a sandwich. BAM! here you go. Enjoy!
