How To make Grilled Lemon Pepper Chicken Breasts with Thyme Gremolata
1/4 cup fresh lemon juice
1 tablespoon coarsely ground black pepper
Salt 1/2 cup extra-virgin olive oil
3 whole boneless skinless chicken breasts
For gremolata: 1 tablespoon fresh thyme leaves
2 large garlic cloves, -- minced
1 teaspoon freshly grated lemon zest
Garnish: Lemon slices Thyme sprigs
In a bowl whisk together lemon juice, pepper and salt to taste and add oil in a stream, whisking until marinade is emulsified. With a rolling pin or smooth side of a meat pounder flatten chicken 1/4-inch thick between sheets of plastic wrap. In a large resealable plastic bag marinate chicken in marinade, chilled, 30 minutes.
Prepare grill. Make gremolata: In a small bowl stir together gremolata ingredients. Grill chicken on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, about 2 minutes on each side.
Serve chicken sprinkled with gremolata and garnished with lemon and thyme.

How to make pan roasted chicken breast with gremolata.
Butterfly the chicken and get the pan hot with a little olive oil or coconut oil.
Sear the chicken then add garlic, thyme and butter. Place in ahot oven, 350 degrees, for 12 - 15 minutes.
Gremolata - roughly cut Italian parsley, capers, lemon zest and juice.

1 fennel bulb sliced
4 leeks, washed and finely sliced
Bunch fresh thyme leaves
2 garlic cloves, peeled and chopped
Olive oil
Knob of butter
Glass of white wine
500g Canneli beans
1 tbsp sour cream
1 x 450g Poachers Pantry Smoked Chicken with Taragon and Lemon
Saute fennel, leeks, thyme and garlic in olive and butter over low heat until soft. In-crease heat and add white wine. Bring to the boil add the beans and a splash of water to almost cover. Simmer 5-10 minutes until creamy. Add sour cream a splash of oil and salt and pepper to season. Meantime, salt skin of chicken and put in warm oven (200) for 20 minutes).
Serve with chargrilled asparagus and hard herbs. (Serves 4)

Delicious crispy and spicy Peri Peri Chicken recipe! Easy to make with crispy and tasteful potato wedges, delicious!
Roasting pan with grill rack:
Recipe:
- For the Peri Peri sauce
- 3 mild chili
- 1 strong chili, African bird eye chili is the original, but you can use anything you have
- 7-8 cloves of garlic
- 2 teaspoons thyme, I use fresh, can also use 1 teaspoon dried
- Lemon juice from 1 lemon
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- Half a red onion
- 2-3 cherry tomatoes
- 2 teaspoons smoked paprika
- 40-50ml/3-4 tablespoons olive oil
For potatoes:
- 6-7 cloves garlic
- 2 teaspoons smoked paprika
- A splash of olive oil
- 2 teaspoons fresh thyme or 1 teaspoon dry
- Salt and pepper
Tips:
Bake the chicken and potatoes on 180C/360F
Spread the Peri Peri sauce when the chicken is almost ready, like half an hour before and bake until crispy and golden.
You can use this recipe also if you are grilling your chicken, it tastes wonderful!
