How To make Grilled Pepper Quesadillas
3 tb Vegetable oil
1/2 Med red onion, peeled thinly
8 8-in flour tortillas
1 Red bell pepper roasted peel
4 oz Mozzarella cheese, grated
6 oz Monterey Jack cheese, grated
2 Garlic cloves, peeled and mi
2 tb Fresh chopped marjoram
2 tb Fresh chopped oregano
1/2 ts Salt
1 pn Black pepper
HEAT 2 T of the oil in a skillet over medium heat. Add the onion and saute over medium heat, stirring occasionally, until the onion is wilted and translucent, about 5 minutes. Heat a skillet over high heat. Soften tortillas by grilling for 30 seconds on each side. Mix the onion, red pepper strips, cheeses, garlic, marjoram, oregano, salt and pepper. Divide evenly over 4 tortillas, and top with the remaining 4, pressing them down gently. Brush both sides lightly with remaining oil. Preheat an oven to 400F. Bake the quesadillas for 3 to 5 minutes, or until lightly browned and
cheese is melted. Cut into quarters, and serve. Makes 16 wedges. NOTE: This can be taken through step 3 up to two days in advance. Stack separated with plastic wrap and covered.

Ingredients
To Make Tortilla
Maida/all Purpose Flour - 2 Cups
Salt - 1 Tsp
Baking Powder - 1/2 Tsp
Oil - 5 Tbsp
Hot Water
To Make Veg Filling
Cooked Sweet Corn - 1 Cup
Onion - 1 No. Finely Chopped
Green Capsicum Finely Chopped
Red Capsicum Finely Chopped
Green Chilli - 1 No. Finely Chopped
Chopped Coriander Leaves
Salt - 1/4 Tsp
Pepper - 1/4 Tsp
Mixed Herbs - 1/4 Tsp
To Make Quesadilla
Oil
Tortilla
Grated Cheese
Veg Filling
Salsa
Method:
1. Mix maida, salt, baking powder in a bowl.
2. Add oil and mix again. Pour some hot water gradually and prepare the dough. Knead it for 3 mins.
3. Cover and let the dough rest for 2 hours in room temperature.
4. Divide the dough into equal size balls and keep them aside.
5. Dust the rolling surface with some flour and roll each dough ball fine and thin.
6. Heat a tawa and cook the tortillas on medium flame for 40 seconds on each side.
7. Wrap the prepared tortillas in a cloth to make sure they are soft.
8. To a large bowl, add sweetcorn, onions, green capsicum, red capsicum, green chili, chopped coriander, salt, pepper, mixed herbs and mix well. Keep this aside.
9. Grease a pan with some oil and let it heat on medium low.
10. Place the tortilla on it and put some cheese, vegetable filling and salsa on one side.
11. Close it all with the other half of tortilla.
12. Gently press and make sure the filled tortillas are cooked on both sides.
13. Yummy Quesadillas are ready to be served.

Mushroom and Roasted Pepper Quesadilla
Makes 4 8 quesadillas
3 tablespoons (45 mL) extra virgin olive oil
4 ounces (110 g) cremini mushrooms, cleaned and thinly sliced
8 (8 inch, 20 cm) flour tortillas
8 ounces (230 g) Manchego cheese, shredded
1 cup (150 g) roasted red bell peppers, thinly sliced
salt and pepper to taste
Place oil in a medium sauté pan over medium-high heat.
Add sliced mushrooms and sauté for 4 to 5 minutes. Season with salt and pepper. Remove from heat and set aside.
Place a large nonstick pan over medium heat and add a single tortilla. Sprinkle 2 ounces (55 g) of shredded cheese over the surface and allow cheese slightly melt, about 2 minutes.
Sprinkle one ounce (28 g) of sautéed mushrooms over ½ the cheese and top mushrooms with ¼ of the sliced bell peppers. Fold the tortilla in half and gently press to seal.
Toast the quesadilla on each side for 3 to 4 minutes on each side, remove from heat, and repeat with the remaining ingredients.
Slice each quesadilla into wedges and serve.

Quesadilla is a popular Mexican food, made by toasting tortillas filled with cheese and vegetables or meat.
What is a Quesadilla?
Basically, a Quesadilla means grilled tortilla filled with cheese. But often this tortilla is filled with spicy fillers like cooked veggies, meat or a mix of veggies and meat along with a lavish amount of cheese.
Ingredients:
6 Flour Tortillas
Cheese (Cheddar/Mozzarella/Monterey Jack)
To make the filling:
2 tbsp Oil
1 tbsp Garlic
¼ cup Onion
½ cup Bell peppers(capsicum)
½ cup Corn(boiled or frozen)
1 cup Tofu(or paneer or mash potato)
Spice mix:
1 tsp salt
½ tsp Paprika(or chile powder)
½ tsp Cayenne pepper
¼ tsp Black pepper powder
½ tsp cumin powder

Recipe: Serves 4
3 Tablespoons of Butter
1/2 Cup of Onion (Sliced)
2 Cloves of Garlic (Chopped)
1 16 oz can of Beans [kidney, cannellini, or black] (Drained and mashed)
1/2 Cup of Spinach
1/2 Cup of Mushrooms
1 1/2 Cups of Cheese (Shredded)
1 Cup of Frozen Corn
Salt to Taste
1/2 Cup of Salsa
4 Tortilla Shells
Instructions:
1. In a large pan, fry onions and garlic with knob of butter on medium high heat. Then proceed to add mushrooms, fry for a minute, and then kidney beans, corn and salsa. Mix and salt to taste. Once hot, remove mixture into separate container.
2. Clean the pan out with a paper towel and return to heat. Lower to medium. Add a knob of butter to the pan, let it melt, and place the tortilla. Swirl it to spread the butter. Add 1/4 of cheese on top. Then add 1/2 of your Quesadilla mixture, or less if you want to make more Quesadillas. place another 1/4 of the cheese on top and top it off with the Tortilla. Press down lightly so the Quesadilla sticks together. Once the Quesdilla has cooked on one side for 2-3 minutes, flip and cook the other side for 2-3 minutes or till a nice browning is achieved.
3. Repeat step two for remaining Quesadilla(s). Cut and enjoy delicious Quesadillas with Greek yoghurt, salsa, and/or guacamole.
