Now while this recipe is made with a lime butter sauce, you can easily substitute lemon for the lime, giving you a beautiful lemon butter sauce as well.
Grilled Salmon with lime butter sauce
Ingredients:
4 - 6 oz pieces of salmon, king or sockeye1/2 cup unsalted butter
2 cloves garlic, minced
1/4 cup fresh lime juice
lime zest from lime(s)
1 1/2 tsp. honey
6 Tbsp. plan yogurt
1/2 tsp black pepper
3/4 tsp. salt
Directions:
Start by making your lime butter sauce. Place the butter in a sauce pan over low heat. When the butter is completely melted, let it cool for a few minutes.
Then pour the butter, lime juice, garlic, salt and pepper into a blender or food processor and blend until smooth, about 30 seconds.
Pour the sauce into a bowl and add the honey, lime zest and yogurt. Whisk to combine. Set the sauce aside and keep warm.
Preheat your grill or pan over medium heat. Rub olive oil over the salmon filets with skin, covering both sides. Squeeze a little bit of lime juice on the salmon and then add some salt and pepper.
Add a drizzle of olive oil to the pan and place the salmon, skin side up on your grill pan, frying pan or even your bbq.
As a rule of thumb, you will cook the salmon approximately 8 minutes total, per inch thick. In my case, I cooked the fish about 3 to 4 minutes per side. Both of my pieces were different in thickness.
You want to get a nice sear on the fish, especially the first side. So make sure your pan is nice and hot. This makes that salmon look mighty delicious when you serve it up.
After you flip the fish over and cook it for about the same amount of time, test for doneness by cutting into the center to see if it is flaky.
Once it's done serve it up and place the lime butter sauce over the top. Garnish with fresh chopped parsley.

Center Cut Salmon Filets
2 Table Spoons Rosemary
1 Tablespoon Thyme
