How To make Grilled Salmon with Lemon & Thyme
Ingredients

salmon, fillet, skinned
3
tablespoon
cognac
1/4
cup
lemon, peel, minced
2
tablespoon
shallot, minced
1 1/2
tablespoon
kosher salt
1 1/2
tablespoon
sugar, brown
1
tablespoon
thyme, fresh, minced
3/4
teaspoon
pepper
Directions:
Place salmon fillets on heavy large baking sheet. Rub cognac over both sides of fish. Mix together all remaining ingredients in small bowl. Rub over both sides of fish. Cover with plastic wrap. Top with another baking sheet. Weight with heavy object. Refrigerate at least 6 hours or overnight.
Prepare barbecue (medium-high heat). Grill fish until cooked through, about 3 minutes per side. Transfer to plates and serve.
Note: Use a sturdy red wine. Serve with sauteed zucchini. Diagonally slice thickly some zucchini with peel left on and brush with butter, lemon and thyme mixture and grill next to the fish.

✅Ingredients
• 4 skin-on salmon portions, about 1-inch thick
• 1 tablespoon olive oil
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1 lemon, cut into wedges
✅Instructions
1️⃣ 00:00:58 - Preheat an outdoor grill to high heat, about 500 degrees F.
2️⃣ 00:00:22 - Rub flesh side of salmon portions with olive oil. Season with salt and pepper.
3️⃣ 00:01:05 - Place the salmon skin side up over direct heat on the grill. Close the lid and let cook 3 to 4 minutes until grill marks form.
4️⃣ 00:01:19 - Use tongs or a spatula to gently flip the salmon skin side down. Either reduce the heat to medium for a gas grill, or to indirect heat for charcoal. The salmon should release easily from the grill grates. Continue cooking with the lid close for another 4 minutes until salmon is cooked through and easily flakes with a fork. Salmon needs to be cooked to an internal temperature of 145 degrees F.

How to make Grilled salmon with Mustard and Thyme Sauce
Serves 2
Ingredients
• 2 Salmon slices
• Salt and Pepper
• Oil
For the Sauce
• 1 cup sliced Mushrooms
• 1 Onion(chopped)
• 2 Garlic(chopped)
• 1 tsp fresh Thyme
• 1 tsp Mustard
• Salt and pepper
• 300ml Cream
Procedure:
1. Preheat the Grill using the highest heat level
2. Season the fish on both sides generously with salt and pepper then drizzle with a little oil
3. Place on the grill and allow to cook for about 3 minutes
4. Turn to cook the second side for a further 3 minutes or until its cooked through. The cooking time will depend on the thickness of the fish you have.
5. For the sauce, fry the onion garlic and mushrooms until slightly browned then add the thyme and stir.
6. Add the cream, seasoning and mustard
7. Allow to simmer adding little water to make the sauce light if its too thick.
8. Serve the fish and pour the sauce on top

• 2 teaspoons minced garlic
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon paprika
• 2 tablespoons finely chopped fresh dill
• Lemon slices for serving
✅Instructions
1️⃣ In a shallow dish combine the lemon juice, olive oil, soy sauce, and minced garlic. Place salmon filets in the dish and flip them over, ensuring both sides are coated.
2️⃣ Next, sprinkle filets with salt, pepper, and paprika.
3️⃣ Preheat air fryer to 400 degrees Fahrenheit.
4️⃣ Spritz a little oil onto the cooking surface of the air fryer and place filets in the air fryer and cook for 8-10 minutes, depending on their thickness. Remove from air fryer.
5️⃣ Sprinkle fresh dill on top of salmon and serve immediately. Garnish with lemon slices if desired.
