How To make Grilled Sirloin Steak w/Mushroom Wine Sauce
4 To 6 center cut top sirloin
-steaks 1 1/2 ts Lemon pepper
MUSHROOM-WINE SAUCE: 8 oz Fresh mushrooms, sliced
1 cl Garlic, minced
2 tb Onion, finely chopped
2 tb Butter or margarine
1 tb Flour
1 1/2 tb Tomato paste
1/4 ts Salt
1/8 ts White pepper
1/2 c Dry red wine or Madeira
1/4 c Beef stock or broth
To prepare wine sauce, saute mushrooms, garlic and onion in melted butter or margarine in saucepan until mushrooms are tender. Add flour, stirring until blended; cook over medium heat for 1 minute, stirring constantly.
Blend in tomato paste, salt and pepper; stir in wine and stock until well-blended. Simmer 20 minutes, stirring occasionally. Adjust seasoning if necessary.
Sprinkle steaks with lemon pepper. Grill steaks over moderately hot coals for 5 to 8 minutes per side for medium rare, or to a desired degree of doneness. Serve with mushroom-wine sauce. Serves 4 Typed in MMFormat by cjhartlin@msn.com Source: Angus Beef Recipe Collection

Pan Roasted Steaks with Mushroom Herb Wine Sauce
Serves 4
4 steaks, 8-12 oz. each
salt and pepper to taste
2 tablespoons sunflower oil, separated
2 tablespoons butter, separated
1-8oz. package mushrooms
1 tablespoon shallots, diced fine
½ cup Carnivor Cabernet wine
½ cup beef stock
¼ cup heavy cream
1 teaspoon chopped chives
1 teaspoon red wine vinegar
Heat a large skillet over medium-high heat for 2 minutes. Season the steaks with the salt and pepper. Add 1 tablespoon oil and steaks to the pan and sear for 2 minutes per side. Lower the heat to medium-low and continue to cook; turning often until done to your liking. Remove steaks to a plate and set aside.
Add 1 tablespoon oil and 1 tablespoon butter to the same pan over medium-high heat and add the mushrooms. Sauté mushrooms for 3-4 minutes. Add the wine and beef stock and reduce liquid by 75% Add the cream and 1 tablespoon butter, chives and vinegar. Simmer for 1 minute. Season with salt and pepper and serve over steaks.
Enjoy with Carnivor Cabernet, Starborough Sauvignon Blanc, Schofferhofer or Sol beers.

►2 garlic cloves, minced
►1/2 Tbsp fresh thyme leaves, minced (or 1/2 tsp dried thyme)
►1/2 tsp salt, or to taste
►1/2 tsp black pepper, freshly ground
►1/2 cup dry red wine (Pinot Noir, Merlot, Cabernet, Sauvignon)
►1 cup beef broth
►1/2 cup heavy whipping cream

Mushroom Wine Sauce Ingredients:
2 Tbsp of Butter
2 tsp of Olive Oil
1/4 Cup of Diced Shallots
1 - 1.5 Cups of Sliced Mushrooms, thickly sliced
1 tsp of minced Garlic
1 tsp of Rosemary
1.5 Cups of Merlot
Salt and Pepper to taste
1. In a pan heat up your olive oil and add in the Shallots. Cook until translucent. Then add in the Red Wine.
2. Simmer for 5 minutes and then add in the mushrooms and garlic.
3. Reduce the wine sauce by half or until it’s desired thickness and finish the sauce with butter. Season
Steaks Ingredients:
2-4 (about 6 oz each) Sirloin Steaks (about 1 1/2″ thick)
2 tsp of minced Garlic
2 tsp of chopped Rosemary
McCormick Montreal Steak Seasoning
Kosher Salt
4. For the sirloin steaks, season both sides and rib on the garlic and rosemary.
5. Heat up another pan and then add butter.
6. Place steaks in the pan and sear. Cook the steaks until your desired doneness.
Mashed Potato Ingredients
2 lbs (5 medium) Potatoes, peeled & diced
1 1/4 cups Heavy Cream
3 Tbsp Butter
1/2 cup Shredded Cheddar Cheese
McCormick Roasted Garlic & Herb Seasoning
Salt & Pepper to taste
1. In a pan boil water and add in the potatoes, cook it until the potatoes are fork tender
2. Drain the water and then add the rest of the ingredients.
3. Mix it up!
