How To make Grilled Steaks w/Garlic Crumbs
2 lb Sirloin Steak
2 1/2 tb Dijon Mustard
1 1/2 tb Dry White Wine
1 t Black Pepper, Ground
2 tb Butter
1 c Garlic, Pressed
1 c Bread Crumbs
1/4 c Parsley, Minced
Preheat the barbecue grill - it is ready when all the coals have an even coat of gray ash. The steak should be at least 1 1/2" thick. Pat the steak dry with paper towels. Mix the mustard, wine and pepper. Spread the mixture on both sides of the steak, using about 2/3 of the mixture. Grill the steaks 5 or 6 inches from the coals, turning once, until medium rare (about 25 minutes total). While the steaks are cooking, heat the butter and garlic together in a heavy skillet and cook for 10 minutes. Add the bread crumbs. Cook over medium-low heat, stirring, until the crumbs are toasted. Brush the top of the cooked steak with the remaining mustard mixture. Press the toasted crumbs onto the top and sides of the steak. Sprinkle with parsley. Serve sliced into 1/2" thick strips. Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

1.5 pounds (680 grams) colossal shrimp - cleaned, shells removed, and deveined - size U12-15
-salt and pepper to taste
-3 tablespoons (42 grams) extra virgin olive oil
-¾ cup (160 grams) low sodium chicken stock
-¼ cup dry white wine
-1 large lemon cut into wedges
-6 tablespoons (85 grams) unsalted butter cubed
For the seasoned breadcrumbs
⅓ cup (50 grams) breadcrumbs
1 tablespoon (14 grams) lemon juice
6 cloves garlic - minced
2 tablespoons (11 grams) Parmigiano Reggiano - grated
2-3 tablespoons flat-leaf Italian parsley - minced

Recipe:
For steaks
6 chicken steak pieces (cut from half chicken breast)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp red chilli powder
1/2 tsp garlic powder
1 tsp soy sauce
1 tsp vinegar (forgot to record it)
1/2 tsp chilli sauce
1/2 tsp worcestershire sauce
4 tbsp oil for frying
1 egg
1/2 cup flour
1 cup bread crumbs + 1 tsp cornflour & 1/2 tsp oregano
For sautéed vegetables:
2 potatoes
1 carrot
1 cup broccoli
1/2 cup sweet corns
1 tbsp olive oil
Salt to taste
Black pepper to taste
1 tsp hot sauce
1 tsp honey
1/2 tsp dried mixed herbs
