How To make Grilled Tempeh w/Red Onion & Eggplant
3 Tempeh cakes
6 sl Red onion
2 sm Eggplants; sliced into
- 1/3" thick rounds Olive oil 12 sl Whole wheat bread
1 bn Arugula
RED WINE MARINADE:
1 c Red wine
4 tb Olive oil
2 lg Garlic cloves
- sliced into ovals 1 tb Rosemary leaves; -OR-
1 ts -Dried rosemary
1/4 ts Fennel seeds
Coarsely ground black pepper SWEET LEMON MAYONNAISE:
1/2 c Mayonnaise
2 tb Lemon juice
1 ts Dijon-style mustard
1 ts Honey
1 Garlic clove
- minced to a paste Salt Freshly ground pepper Combine all ingredients for Red Wine Marinade. Slice the tempeh cakes in half crosswise, then split each half horizontally by slicing carefully. Marinate the tempeh cakes at room temperature for 1 hour, or longer in the refrigerator. Combine all ingredients for the Sweet Lemon Mayonnaise and set aside in the refrigerator. Brush the eggplant slices with olive oil. On an open or closed grill over medium-hot coals, grill the eggplant and onion slices for 10 minutes per side and the tempeh for 8 minutes per side or until well-browned. Grill the whole wheat bread slices over low coals until toasty. Arrange the vegetables and tempeh on slices of whole wheat toast spread with Sweet Lemon Mayonnaise and several sprigs of fresh arugula. I have taken a quick break from season 4 recipe videos to bring you this recipe I came up with using @tidefordorganics new Sun-dried Pesto. They are a great 100% vegan, gluten free & organic company. So I was honoured when they asked me to come up with a recipe using their new pesto. It worked so well with this recipe, really bold flavours. I love charred Aubergine/Eggplant & stuffing them with this amazing filling was a winner!

I'd like to share how to make a vegan tempeh sandwich with homemade vegan mozzarella cheese. A really tasty and easy vegan recipe that I hope you will like. This is one of my favorite vegan meals.
Ingredients : 2 whole wheat slices of bread, tempeh, tomato, avocado, watercress, mushroom, red onion, vegan mayo, mustard sauce, pickles, dark soy sauce, maple syrup, homemade vegan mozzarella cheese.(I'd like to show you how to make vegan mozzarella cheese on next time).
How to:
1. baking a tempeh with mushroom. (put 2 tbs of dark soy sauce, 1tbs of maple syrup) and bake it 15 to 20 min.
2. cut all the vegetables.
3. toast bread and bring homemade vegan mozzarella cheese.
4. spread vegan mayo and mustard sauce.
5. put all the vegetable and tempeh.

Hello everyone! Today I will share with you guys a delicious dish of eggplant. The minced meat and eggplant produced in this way are very delicious and not greasy. The eggplant does not absorb much of the oil and does not turn black. It is too fragrant. Let try it someday!
Ingredients
- 150g minced pork
- 1tbsp corn starch
- ½tbsp salt
- cooking oil
- some green onion
▶ For soak eggplants
- 3or4 eggplants (medium side)
- 1L water
- 1tbsp white vinegar
▶ Make sauce
- garlic
- ginger
- chili
- ¼tsp salt
- 1tsp sugar
- 1tbsp soy sauce
- 1tbsp balsamic vinegar or black vinegar
- 50ml water
