How To make Grouper with Spicy Mustard Sauce
1 lb Grouper, or Cod - fresh
- or frozen 2 tb Lemon juice
1/8 ts Black pepper, cracked
SPICY MUSTARD SAUCE:
Non-stick spray coating 1/4 c Mayonnaise dressing -Or
-salad dressing, non-fat 2 tb Chives, finely snipped
2 tb Skim milk
1 tb Parsley, finley snipped
1 tb Capers, rinsed and drained
2 ts Dijon-style Mustard
Hot-pepper sauce, bottle Thaw fish if frozen. Cut into serving-size pieces. Sprinkle fish fillets with lemon juice and pepper. Spray unheated rack of broiler pan with non-stick coating. Place fish on rack. Broil 4 inches from heat for 4 to 6 minutes or until fish flakes easily when tested with fork.
Meanwhile, for sauce, in small mixing bowl, combine mayonnaise or salad dressing, chives, skim milk, parsley, capers, Dijon-style mustard and few dashes of hot-pepper sauce. Transfer fillets to serving plates. Spoon sauce over each serving. Set the bottle of Hot Sauce on table for use if desired.

Pan Seared Grouper with Delicious Sauce!
2 pounds fish filets ( I had fresh caught scamp and scorpion fish)
2 T vinegar
Salt and pepper
Cayenne and paprika
3 T butter
Sauce:
1/2 cup chicken broth
1/2 cup mayonnaise
1 tsp Dijon mustard
Heat an iron skillet to low/medium, and add the butter.
After the filets have been cleaned, Place them on a plate, and pour over the vinegar. Season one side with salt, pepper paprika, and Cayenne. Lay seasoned side down in the skillet, And season the other side.
Allow the fish to cook slowly for about four -5 minutes on each side, Or until the fish is browned and flakes with a Fork. I baste the fish with the hot butter throughout the cooking as well.
Sauce:
Place mayo and mustard in a medium bowl. heat up the chicken broth over medium to steaming hot, almost boiling. While whisking the mayo and mustard constantly, drizzle in 1 to 2 tablespoons of the hot broth. Continue whisking making sure To thin the sauce to your liking. I use about 1/4 cup hot broth.
