How To make Harvest Time Meatballs
1 x Recipe Basic Meatballs
2 T Margarine Or Butter
1/8 t Instant Minced Garlic OR
-1 fresh clove of garlic, -minced, OR 1/8 t of -garlic powder 1/2 t Thyme Leaves
1/2 lb Fresh Mushrooms sliced
3 ea Med. Zucchini, thin sliced
1/2 t Salt
1/3 c Parmesan Cheese; Grated
2 ea Tomatoes
-cut into 8 wedges each Prepare the basic meatballs and set aside. Melt the margarine in a large skillet. Add the garlic, thyme leaves, mushrooms, and zucchini; cook over medium-high heat for about 5 minutes, stirring occasionally. Add the cooked meatballs; cover and simmer, stirring occasionally, until the vegetables are tender, about 10 minutes. Sprinkle with the salt and cheese. Add the tomato wedges, cover and heat for 2 to 3 minutes.

These mouth-watering Greek meatballs are one of the most versatile little pockets of flavour EVER! In this video, I show you how to have Greek meatballs three different ways PLUS, I've included a bonus recipe in there too!
Kefthedes (Greek Meatballs)
Prep Time: 15 Minutes
Cook Time: 12 Minutes
Ready in: 30 Minutes
Serves: 6-8
Ingredients:
2 lbs. lean ground beef
1 yellow onion, finely chopped
4 cloves garlic, finely minced
2 tsp. oregano
2 tsp. salt
1 tsp pepper
¼ tsp. chili pepper flakes
1 c. milk
1 1/2 c. panko breadcrumbs
Directions:
Preheat oven to broil, or 500 F
Add all the ingredients to a large bowl and mix all together using your hands.
Roll out the meatballs by measuring approximately one heaping tablespoon and placing them on a large baking sheet.
Place them on the top rack in your oven and broil for approximately 12 minutes, or until the tops are nice and brown and the meatballs are cooked through.
Serve with your choice of side and enjoy!
BONUS Perfect White Rice
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: 20 Minutes
Serves: 2-3
Ingredients:
1 c. rice (white rice of your choice - I'm using Jasmine)
2 c. water
¼ tsp salt
2 tbsp salted butter
Directions:
Add the rice to a medium pot.
Rinse the rice thoroughly until the water is clear.
Drain the water then add 2 cups of water and the salt.
Place the pot over medium-high heat and bring to a boil.
Once the rice is boiling, turn the heat down to low and cover the pot for 10 minutes.
Once the rice is cooked, add 2 tbsp salted butter and stir it in until the butter is melted.

Bratwurst Meatballs with Smoked cheddar cheese sauce
1 lb loose bratwurst meat
1 lb other ground meat
1 ½ cups cauliflower rice
Preheat oven to 400. Spray 9x13 casserole dish with cooking spray. Mix ingredients thoroughly. Make into 1 ½ inch balls and place in casserole dish. Bake uncovered until balls are 165 degrees. About 30 minutes.
Cheese Sauce:
4 tbsp butter
1 cup heavy cream
4 cups shredded smoked cheddar cheese
¼ tsp xanthum gum
Salt
Pepper
Mix butter, cream, and cheese together in sauce pot. Stir and heat on medium heat until all ingredients are melted and combined. Sprinkle xanthum gum and mix in thoroughly until dissolved. Add salt and pepper to taste.
To serve, place meatballs in bowl and ladle cheese sauce on top.

Will it Freeze Dry? - MEATBALLS from Costco - in a Harvest Right Freeze Dryer
Success! Freeze Dried Meatballs!
We Freeze Dried a 6 pound bag of Italian Style meatballs from Costco. I cut them in half and placed them flat side down on paper towels on the Harvest Right trays. I also covered them with paper towels just in case.
The goal was to use them in Spaghetti and sauce, so we re-hydrated them under a vacuum in an attempt to speed things up. In the end, the noodles were ready but the meatballs were still hard in the middle. After an hour or so the meatballs were ready and were very good!
So, the takeaway is to re-hydrate the meatballs first and give them an hour of time before you need them.
