Swedish Meatballs (Makes about 15 to 18 meatballs)
2 1/2 lb. Ground Meat ( Beef, Pork, & Veal)
1 Cup Fresh Bread Crumbs
1 Cup Fresh Yellow Onion
1/2 Cup Scallions
1 T Fresh Garlic, Minced
Minced Dill Stems
2 Egg Yolks
2 Tablespoons Sour Cream
1 T Unsalted Butter
1 1/2 Cups Milk
2 t Ground Allspice
2 t Nutmeg
1/2 t Ground Cloves
1/2 t Ground Black Pepper
1 t Salt
Cooking Oil (enough to cover the pan by 1 inch deep)
Gravy
3 T Unsalted Butter, 2 T Pan Oil, 5 T AP Flour, 3 to 3 3/4 Cups Beef Broth, 1/4 t White Pepper,
1/4 Cup Sour Cream, 1 T Worcestershire Sauce, 2 T Fresh Dill Weed, 2 Fresh Allspice Leaves
