How To make Heidelberg Meat Loaf
1 1/2 lb Lean Ground Beef
3 ea Slices Rye Bread; Torn Up
1 c Beer Or Bouillon; Any Brand
1 ea Egg; Lg
1/4 c Onion; Chopped, 1 Sm
1 t Salt
1 t Caraway Seed; Optional
1/2 t Celery Seed
1/4 t Pepper
Heat the oven to 350 degrees F. Mix all of the ingredients together. Spread the mixture into an ungreased loaf pan, 9 X 5 X 3-inches. Bake uncovered for 1 to 1 1/4 hours. Drain off the excess fat and let stand for 5 to 10 minutes before slicing. Serve on a heated platter.

Beef Bourguignon
-6 slices bacon
-1 onion, diced
-4 pound beef stew meat
-sprig fresh parsley, thyme and 2 bay leaves bundled
-pound mushrooms quartered
-2 Tablespoons Better Than Beef Base
-bottle red wine
-4 cups beef broth
-1/2 cup water
-1 heaping tablespoon corn starch
Saute bacon in dutch oven and add onions when bacon gets crispy; continue to cook until onions are soft. Salt and pepper to taste. remove bacon and onions to bowl. Add beef stew meat to dutch oven a in batches and brown on all sides. Combine browned meat, bacon and onions. Add beef base, wine and broth. Cover and cook on low about 2 hours or until meat is fork tender. Add 1/2 cup water and cornstarch to a glass, mix and add to meat mixture to thicken sauce.
Red Sauce for Chili Rellano
-1/3 cup oil
-1 onion diced
-4 cloves garlic minced
-2 teaspoons salt
-1 teaspoon Mexican oregano
-1 teaspoon black pepper
-1 teaspoon cumin
-3 teaspoons Guajillo ground pepper
-1 teaspoon paprika
-1/3 cup flour
-14 1/2 can diced tomatoes
-4 cups chicken broth
-8 ounce can tomato sauce
Heat oil in pan and saute onions and garlic until soft. Add seasoning and flour and cook one minute
Add tomatoes, broth and tomato sauce; cook for about 30 to 40 minutes. Once sauce has cooked down some, turn off heat and let cook. Blend mixture in blender until smooth.
Chili Rellanos
-6 pablano chili, roasted and skins removed
-6 ounce monterey jack cheese
-2 eggs separated
-1 teaspoon baking powder
-3/4 cup flour
-1 cup oil for frying
Remove seeds from inside peppers by making small slit on one side. Stuff with an ounce of cheese and coat in flour. To make batter beat egg yolks with baking powder and fold in egg whites that have been beaten to stiff peaks. Coat chili in batter and fry in hot oil until golden brown.
Sheet Pan Chicken Fajitas
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon Kosher salt and 1/2 teaspoon ground black pepper
2 bell peppers sliced
1/2 large yellow onion, halved and thinly sliced
1 tablespoons extra-virgin olive oil
1 1/2 pounds boneless, skinless chicken breast cut into strips
Add half the oil and seasonings to the veggies; place on sheet pan.
Add the other half the oil and seasoning to the chicken; add to the sheet tray. Bake in pre heated 400 degree oven for 30 minutes.
Serve with flour tortillas and your choice of toppings; shredded cheese, guacamole, hot sauce, salsa and sour cream. Serves 4-6
Pico de Gallo recipe;
-6-8 roma tomatoes diced
-1 small white onion diced
-1 to 2 jalapeno minced
-1 large clove of garlic finely minced
-1/2 bunch cilantro minced
-juice of 1 or 2 limes
-salt to taste
Mix all ingredients in bowl.

INGREDIENTS:
●1 1/3 lbs ground beef (I like it with ground round)
●2 eggs
●3 tablespoons onions , finely chopped
●salt and pepper, to taste
●1 slice white bread, torn into 1/2 inch chunks
●1/8-1/4 cup milk
●1 slice bacon , uncooked, cut crosswise into narrow strips (1/4-inch x 1-inch slivers)
●1 tablespoon fine breadcrumbs (generous, a grated hard roll, oats or wheat germ will do)
●1 tablespoon catsup (generous)
